Invention relates to a cutting tool, in particular, to knives for cutting food products. A cutting tool (1) has a cutting section (13) of a cutting blade with coated surface (7) made of electrode material or a product of reaction of electrode material melted by pulse discharges induced between the cutting section (13) of the blade and the electrode in the engine oil and between the body of the blade and the coating the gradient metallic structure is formed with the depth from 5 micrometres to 30 micrometres. Knife comprises handle, body with blade and back edge provided with the stop mounted for permitting movement along the back of the knife body. The blade is horizontal. The stop is provided with the groove along the axis of symmetry from below, whose width is equal to the thickness of the knife body, and, from above, with the ellipsoidal area which smoothly goes into the rectangular shank. The handle is secured to the knife body above the horizontal blade and back and is provided with the horizontal groove from above, whose depth is equal to the thickness of the rectangular shank of the stop for setting the rectangular shank of the stop having a hollow for the free receiving of L-shaped stop tip at its end. To provide movement of the stop, a screw with the head is mounted in the top section of the handle face . The L-shaped tip of the stop is made for permitting free setting in the vertical wall on the cross-piece of the screw head. From the back face, the screw head has a thickening whose width is greater than the width of the L-shaped tip of the stop, and the hollow in the groove of the handle with L-shaped tip of the stop is provided with wax flush-mounted with the surface of the handle . |
