The invention relates to alcoholic beverage industry to get vodka.
Famous vodka “Gulyaev”containing sorbitol, sugar syrup and water-alcohol liquid (Patent RF №2001096, With 12 G 3/08, publ. 15.10.93 g) [1].
However, the market dictates the need to expand the range of vodkas.
The famous “Vodka of the USSR”, containing water-alcohol infusion rice first plum, sugar syrup and water-alcohol liquid (Patent RF №2181143, With 12 G 3/08, publ. 10.04.2002,) [2].
However, the organoleptic properties of this famous vodka is not high enough.
Famous vodka “Triumph”, containing the antioxidant composition and a water-alcohol liquid (Patent RF №2039807, With 12 G 3/06, publ. 20.07.95,) [3].
Part of this famous vodka antioxidant composition contains BHT, ascorbic acid, citric acid and sodium bicarbonate. This composition does not have a sufficiently high antioxidant activity.
Known food additive “Capilar”high antioxidantes activity (Eva and other Biologically active additives. St. Petersburg, Owl, 2001, p.185-187) [4].
However, this known additive did not enter into the composition of vodka to give it antioxidant properties.
It is known that the composition of vodka impose dietary supplements.
For example, the famous vodka containing water-alcohol infusion rice first drain, food additive “Bonification AMO-97” company “Reynaud and Pics”, France, 65,8%sugar syrup and water-alcohol liquid (Patent RF №2163261, With 12 G 3/06, publ. 20.02.2001,) [5].
However, this known vodka does not have a sufficiently high biological activity and lack of high organoleptic characteristics.
The closest analogue of the proposed vodka is vodka “Toliatinskaya original”containing a water-alcohol infusion first drain rice, sweetening component and a water-alcohol liquid (Patent RF №2158296, With 12 G 3/06, publ. 27.12.2000,) [6].
The composition of this famous vodka as a sweetening component is honey. Additionally, it contains glycerin. For the preparation of water-alcohol infusion, part of this vodka, use grain milled rice.
“Synergetic action of the ingredients of this famous vodka “and their quantitative ratio is that the enzymes of honey (diastasis, invertase, pectinase and others) contribute to the intensification of the process of mass transfer of the whole complex of biologically active substances rice in water-alcohol environment and education with ether-alcohol complex ester bonds, and aromatic substances of honey not only complement but also enhance the smoothness of the taste and richness of the flavour of the finished vodka, complementing the biologically active complex of rice broad-spectrum (starch, proteins, fats, fiber, minerals, and others) such digestible sugars, such as glucose, fructose, as well as organic acids. The addition of glycerin not only softens the taste of vodka, but also enhances the assimilation of biologically active complex environment.” Therefore, this known invention allows to obtain vodka, enriched with a complex of biologically active substances, easily digestible sugars, enzymes and organic acids, thereby increasing biological and nutritional value of the finished product with a subtle honey-almond tone in the finish”.
However, in the composition of this famous vodka used infusion grains of polished rice (and therefore depleted of biologically active components contained in the shell of the grains). In this famous vodka there are no components with antioxidant activity, and almond shade finish this famous vodka, perhaps, gives the honey collected from the flowers with this tone in taste.
The technical result achieved by the present invention is the improvement of organoleptic characteristics of vodka, making cognac shade of its taste and aroma.
This technical result is achieved by the fact that vodka containing water-alcohol infusion first drain rice, sweetening component and a water-alcohol liquid contains a water-alcohol infusion first drain rice unpolished brown, as a sweetening component it contains 65,8%sugar syrup and sorbitol further comprises a food additive “Capilar”, in the following ratio of components, l 1000 gave:
water-alcohol infusion of the first drain
rice unpolished brown 1,4-1,8
65,8%sugar syrup 7,8-8,2
and kg 1000 gave:
food additive “Capilar” 0,07-0,08
sorbitol 0,226-0,230
water-alcohol liquid rest of the fortress of 40%.
Mostly vodka contains water-alcohol infusion first drain rice unpolished brown, prepared by maceration of 0.36-0,40 kg of unpolished rice brown with 1,8-2,1 l aqueous-alcoholic liquid fortress 60% within 5 days.
To increase the biological activity of vodka in her composition of the food additive “Capilar”with high antioxidant activity due to the presence of dihydroquercetin. In addition, when preparing the vodka used rice infusion, made from rice unpolished brown, rich in vitamins, in contrast to the polished rice that is used in the preparation of the famous vodka [6]. For harmonizing the taste of the target drink it introduced sorbitol. This vodka gets soft taste with cognac flavor and cognac shade in the aroma.
Below are examples illustrating the invention.
Example 1. The vodka used rectified ethyl alcohol “Lux” according to GOST R 51652-2000, drinking water according to GOST R 51232-98 and SanPiN 2.1.4.1074-01 with hardness up to 1 mol/m 3 for natural water and 0.2 mol/m 3 for fixed water, rice unpolished brown on THE other 9294-001-33150217-96, sorbitol food on THE 64-5-17-86, food additive “Capilar” beyond 9354-001-17664661-00.
The vodka is prepared sorting, pass it through the coal-cleaning the battery with the speed of filtration 40 dal/hour for fresh coal (coal active crushed wood brand BAU-a GOST 6217-74) and up to 30 dal/hour for regenerated carbon. The resulting vodka is sent to zavodnoi Chan. Dietary Supplement “Capilar” and sorbitol are dissolved in an aqueous-alcoholic liquid. Prepare 65,8%sugar syrup and water-alcohol infusion first drain rice unpolished brown. The prepared solution was filtered and bring in zavodnoi Chan. The contents of the tank mix thoroughly after adding each ingredient.
Prepare vodka with the following ratio of ingredients, l 1000 gave:
water-alcohol infusion first
drain rice unpolished brown 1,4
65,8%sugar syrup 7,8
and kg 1000 gave:
food additive “Capilar” 0,07
sorbitol kg 0,226
water-alcohol liquid rest of the fortress of 40%.
When this water-alcohol infusion rice first drain is prepared by infusion of 0.36 kg of unpolished rice brown with 1.8 l of water-alcohol liquid fortress 60% within 5 days.
Cooked vodka contains biologically active ingredients of the extract of rice unpolished brown in combination with antioxidant components. It has a soft taste of vodka, with a nice cognac flavor. She aroma characteristic of vodka, with a light cognac shade.
Example 2. According to the method of example 1 to prepare a water-alcohol infusion rice first drain by infusion 0,40 kg of unpolished rice brown with 2.1 l of water-alcohol liquid fortress 60% within 5 days. Prepared water-alcohol infusion rice unpolished brown used in the preparation of vodka by the method of example 1. Cooked vodka has the following ratio of components, l 1000 gave:
