SUBSTANCE: head has housing with branch pipe provided with bushing. Immovable shaft with longitudinal opening for supplying of compressed air is incorporated inside housing. Immovable shaft carries sleeve arranged so as to define collagen mass slot relative to branch pipe bushing, and rotary sleeve connected with ring, on which conical roller bearings and spiral gear are disposed. Head has collagen mass supplying system connected with housing mid portion, and cooling system. Head is equipped with movable and immovable end water and mass tight gaskets respectively positioned in mid portion of housing, and water-tight gaskets arranged in its rear portion. Helical grooves of 0.8-0.9 mm depth and thread angle of 60±2 deg are formed on rotary sleeve.

EFFECT: increased efficiency and provision for producing of required amounts of products owing to complete collecting of collagen mass for forming of casing and elimination of carrying away of said mass with water.

The present invention relates to food industry, in particular for machines for the production of artificial protein shell, and more particularly, concerns the construction of the forming head, which is an integral part of the forming machine.

Artificial protein sausage casing is obtained by processing collagen containing waste enterprises in the leather industry. Artificial protein shell ensures standard sizes. Thanks to its natural physico-chemical properties it provides long-term preservation of meat products, improves texture: taste and nutritional value, allows you to fully automate production lines, the production not only of sausage, but also various kinds of meats.

Die head is used for the formation of collagen mass shell in the form of an endless sleeve of interwoven collagen fibers.

The forming head includes a housing, a rotary and stationary shafts.

The housing consists of two modular parts: the front and back. The front part of the case is made in the form of a cast is punnai details fixed on the cooling drum and filler. In the front part of the housing is mounted feed system mass, consisting of tubes.

The main weaknesses of the forming head should include the following. The technical task to be solved by the invention is to improve the performance of the head and product quality at the expense of other than in the most close to the lectern, the interaction between the stationary shaft and the rotary sleeve. Seals 15, 16, 19 and 20 provide the provide the tightness of the internal cavity of the housing 1 and prevents the collagen mass in bearings 10. Seals 17 and 18 prevent the ingress of water into the body 1 of the head. The rotary sleeve 8 through the ferrule is connected with auxiliary motor 27.

To the middle part 13 is connected to the pipe 2, in which the molding shell in the tube. In the rear part 23 is made a hole 30 through which water for cooling, and a hole 31 through which the diverted water is used in the wastewater. The head is driven by motor 27 through a coupling 32.

Head for forming a protein shell works as follows.

Through holes 14 located in the middle part 13, receives water for cooling the moving seals 16, 18 and 19 of the rotary sleeve 8 of the bearing 10, and through the hole 29 in the middle part 13 of the used water goes into the sewer.

In the hole 30 made in the rear part 23, water for cooling of the shroud 9 of the bearing 10 and the rolling seal 21, and the used water through a hole 31 goes into the drains.

Thus, thanks to the distinctive signs provided otherwise by the interaction of the stationary shaft and the rotary sleeve - possible connection of the slide bearing with full capture of the collagen mass for forming shell and excluded ablation mass of water, i.e. the improved performance of the forming head, and as a consequence obtained the required product quality.
