SUBSTANCE: disposable unit comprises a concentrated liquid food product, and also comprises an eductor and a microfiltration device. The eductor water inlet is made with the possibility to be connected to an external water source. The gas inlet of the microfiltration device is made with the possibility to be connected to an external gas source, and the outlet of the microfiltration device is made with the possibility to release a foamed food product created by means of the microfiltration device from the disposable unit. The system for preparing a foamed food product comprises a device for preparing a product for preparing said foamed food product and such a disposable unit. Said device comprises a water source, a water heater and means for forcing water pressure, made with the possibility to connect to and to disconnect from the eductor of the disposable unit. The device additionally comprises a source of pressurized gas and means for forcing gas pressure, made with the possibility to supply the pressurized gas to the microfiltration device. In the process of preparing a foamed food product, heated water is supplied to the eductor water inlet to entrain the concentrated liquid food product from the container and to mix this concentrated liquid food product with heated water.

The method for preparation of a foamed or cream instant beverage involves the stages of injection of the specified volume of cold water into at least one capsule containing the composition intended to ensure foam-formation during cold water injection. Then one ensures dispensation of the instant beverage being the result of cold water interaction with the capsule contents; in the beverage the said interaction leads to the capsule contents dissolution in cold water under pressure and without mechanical stirring. Cold water is sequentially injected into at least two capsules in the extraction device for the milk-based instant beverage preparation; in the device the first capsule, wherein water is injected, contains dry milk, a whitening component and sugar; the second capsule, wherein water is injected, contains dry milk, a basic soluble taste-and-flavouring component and sugar.

EFFECT: one proposes a new method for preparation of a milk-based cream beverage from a capsule.

The device for preparation of beverages, implementing the claimed method, comprises a device designed for brewing the beverage based on the components placed in the capsule. The injection means is equipped with a piercing element with an internal axial channel for hot water supply, and the internal axial channel is oriented nearly horizontally with penetration of the piercing element through the capsule membrane. The injection means is equipped with at least one outlet for directing the hot water down to the lowest part of the capsule while holding the capsule in the given position. Two side outlets are bored holes.
