All the components are taken at the preset components ratio.

The invention relates to the technology of production of preserved second lunch dishes.

Known method of preparing canned “Goose with cabbage”, providing training prescription components, the shredder and freezing fresh white cabbage and onions, rubbing apples, mixing the listed components with salt and black pepper bitter with obtaining side dish, cutting and frying gustini, packing gustini, side dish and bone broth, sealing and sterilization (EN 2302163 C1, 2007).

The technical result of the invention is to provide a new canned food with the use of non-traditional plant materials.

This result is achieved in that in the method of preparation of canned “Goose with cabbage”, providing training prescription components, chopping and freezing of fresh cabbage, chopping onions, rubbing apples, mixing the listed components with salt and black pepper bitter with obtaining side dish, cutting and frying gustini, packing gustini, side dish and bone broth, sealing and sterilization according to the invention use ornamental cabbage, and the components used in the following ratio of expenses, wt. including:

The method is implemented as follows.

Components of the prescription prepared by traditional technology.

Prepared fresh ornamental cabbage chopped and frozen.

Prepared onions chopped.

Prepared apples RUB.

These components prescription ratio is mixed with salt and powdered black pepper bitter with obtaining a garnish.

Prepared gustino fried.

Gusyatin, garnish and bone broth Packed in prescription ratio, sealed and sterilized with obtaining the target product.

The costs of the components are given taking into account norms of waste and losses of the respective raw materials. Given in the form of interval consumption of onions covers the possible change of shelf life of raw materials.

Obtained by the described process engineer�and preserves on organoleptic properties and chemical composition similar to the product on the closest analogue.

Thus, the proposed method allows to get new cans with the use of non-traditional vegetable raw materials without changing the organoleptic properties of the target product.

SUBSTANCE: method involves preparation of raw materials, spices and brine, poultry meat salting, ageing, filling preparation, shaping and thermal treatment. Filling is represented by poultry by-products, dried apricots, dried plums and raisins. The roll is shaped into natural casing represented by bung and slightly dried at a temperature of 60°C during 10-20 minutes; then one performs frying with smoke at a temperature of 85-90°C during 45-60 minutes and cooking at a temperature of 80-85°C. Smoking is performed at a temperature of 75-80°C during 15-20 minutes; alternatively, one performs smoking at a temperature of 25-30°C after cooling to a temperature equal to 25-30°C.
