The invention relates to the production technology eateries canned.

A method of producing canned "tomato Salad with tofu and onions", providing training recipe components, cutting and blanching the tomatoes and onions, cutting and freezing coriander, rubbing tofu, crushing walnuts, mixing the listed components with lemon juice, salt and calcium citrate, packing the mixture and mayonnaise, sealing and sterilization (EN 2367248 C1, 2009).

The disadvantage of this method is high adhesion to the walls of the container obtained target product.

The technical result of the invention is to reduce the adhesion to the walls of the container obtained target product.

This result is achieved in that in the method of production of canned "tomato Salad with tofu and onions", providing training recipe components, cutting and blanching the tomatoes and onions, cutting and freezing coriander, rubbing tofu, crushing walnuts, mixing the listed components with lemon juice and salt, packing the mixture and mayonnaise, sealing and sterilization according to the invention, the mixture optionally use the ground meal of pumpkin seeds, which is pre-filled with drinking water and withstand is for swelling, and the components used in the following ratio of expenses, wt.h.:

The method is implemented as follows.

Prescription components prepared according to the traditional technology.

The prepared tomatoes and onions are cut and blanched in hot water.

Prepared coriander cut and freeze.

Prepared tofu RUB.

Prepared walnuts crushed.

Prepared ground meal of pumpkin seeds, obtained by known techniques (Vasiliev A. G., Dvorkin, A., Kasyanov, I. R. what this technology sausages functional purpose with the addition of pumpkin seeds - Krasnodar: INEP, 2008, S. 38-45), pour drinking water in the ratio by weight of about 1:5 and incubated for swelling.

The pear and quince compote production method is as follows: after preliminary preparation and packing into jars, fruits are poured with 85°C hot water for 3 minutes; then water is replaced with 98°C syrup. Then the jars are sealed, put into carrier ensuring ait-tightness; compote is heated in 120°C heated air flow at a rate of 1.5 m/sec during 50 minutes. Then one performs maintenance in a chamber at a temperature of 105°C during 15 minutes and cooled in 20-22°C air flow at a rate of 7-8 m/sec during 25 minutes. During the process of heat treatment in an air flow, heated up to 120°C, and cooling the jar is subjected to interrupted 2-3-minutes' turning upside down with a frequency equal to 0.3 sec-1 with a 2-3 minutes' interval.

A method provides for mixing of a crystalline active ingredient with a derivative of starch in the amount of 7 wt % to 25 wt % to total weight of the mixture prior to spray drying, the second carrier material and xanthane gum before a suspension, a dispersion or a solution of the active ingredient is formed. The crystalline active ingredient has a speed of dilution in water without any mixing at the temperature of 25°C during more than 15 minutes at concentration of the active ingredient of 14 ppm. SUBSTANCE: invention is related to a method for manufacture of moulded food products. The method involves manufacture of a frozen semi-product of meat, game, poultry of a combination thereof. From the said semi-product, a food product of desirable shape in the process of processing in a technological line with application of at least single-time moulding process. In the process of moulding, the semi-product, with the help of at least one stamp, is pressed to a flat or profiled thrust plate to impart the required shape. The stamp exercises impact onto the semi-product at at least two stages of partial squeezing. The partial squeezing stages are spaced in time with an intermediate stage or a pause. At the first partial squeezing stage the semi-product preliminary moulding is performed. At the second partial squeezing stage, the semi-product additional moulding is performed by way of increasing squeezing pressure and/or further movement of the stamp in the direction of the thrust plate.

EFFECT: invention allows to produce a frozen semi-product and to prevent appearance of ruptures in the semi-product structure or change of the product colour or fibrous structure.

SUBSTANCE: invention relates to the equipment for thermal processing of fodder grain and can be used in combined fodders and food-processing industry. The unit includes a feed bin, in alignment with which heat exchanging device and VHF chamber with VHF energy source are located. The unit has a chamber of a swelling. A feed bin, heat exchange device, VHF chamber and swelling chamber are connected to each other with batchers sealed with atmosphere enclosed boxes, and form a sealed system. In the heat exchange device equipped with the steam supply system, on internal surface of the case at the angle 45° to vertical axis the guiding disk rippers are fixed. The disks are designed as an ellipse, with a clearance 30 mm between them, they have in the lower part a trapezoid cut, the smaller base of which is located at the distance 0.5R of larger radius of the ellipse. FIELD: food processing industry, in particular complex reprocessing of buckthorn berries.

SUBSTANCE: sea buckthorn berry refuse is sequentially extracted with water, liquid carbon dioxide and aqueous alcohol solution, and respective extracts are isolated. Extraction is carried out with separate feeding of water and alcohol, and in each step pressure is decompressed to provide extractant boiling and then is built up to origin value. Water extract is concentrated and blended with juice followed by clarifying and pre-packing. CO2-extract is pre-packed. Aqueous-alcohol extract is distilled to eliminate the alcohol; residue is subjected to vacuum freeze-drying and pre-packed. Solvent cake is dried, disintegrated and pre-packed.
