Portable device for frying and maintaining high temperature of prepared food

FIELD: food industry.

SUBSTANCE: device comprises a convex pan for the product retention, a bowl with hot coals for the pan heating and a stand for the pan and the bowl retention. The stand is designed in the form of a closed chamber containing side walls having undercuts matching the pan shape in the upper part and a horizontal platform with a cut-out for installation of the bowl with hot coals. Cut-outs are made in the stand body below the horizontal platform for convenient hand gripping with the view of the device transportation and for air delivery with a view of the table bearing surface cooling. Cut-outs for oxygen access to the hot coals are made over the horizontal platform.

EFFECT: enhanced utilisation of heat generated during fuel burning and improved fire safety.

The invention relates to the field of food industry, and more specifically to a device for roasting and keeping cooked food warm, and can be used in catering establishments and in the home.

It is known that traditional Azerbaijani device consisting of the product holder, which is made in the form of a concave pan (saj), under which is mounted a bowl filled with hot coal, coasters, mostly frame-truss structure to hold the pan and the bowl in the desired position, and the metal tray under the Cup, and serve as a support for the stand.

This device is mainly used for heat preservation served on the pan ready meals, but can be used for thermal processing-cooking dishes for cooking some of them, such as cakes, pan flips curved side up. This device is selected as a prototype.

However, the prototype has a number of disadvantages, which are as follows. Due to the fact that the stand has an open design and has no side walls, the heat from the burning of coal required to heat the pan, partially goes with the hot air in the lateral direction, bypassing scolaro who have thereby not allowing you to heat it to the desired cooking temperature or to keep prepared food hot for a long enough period of time without replacing the cooled coal.

Due to the lack of lateral walls of this structure is a fire hazard, as in the case of shocks, shock or rough handling coals or burning particles from the bowl can fall out that in the conditions indoor use may result in fire.

The present invention aims at improving the utilization of the heat from combustion of the fuel and improve fire safety.

For this purpose according to the invention, the stand (1) under the pan (2) has a closed chamber, which contains a side wall having in the upper part of the undercuts in the form of a pan and a horizontal platform (3) with hole for installation of a bowl with hot coals (4). In the case of the stand below the horizontal platform openings (5) for easy grip hand with the purpose of carrying device and the supply of air to cool the bearing surface of the table. Above the horizontal platform openings (6) for the access of oxygen to the hot coals.

The proposed device due to the enclosed design allows to increase the share of heat, which is used for heating of the product holder, and to improve the level of fire safety in the operation of the device, which distinguishes it from the prototype.

The side walls are made double-walled with inner and outer side walls mounted with a gap. The chargrill is made demontable and comprises two rectangular long side walls, two short side walls, four legs and a removable bottom. Each side wall comprises inner and outer walls joint together. Each outer wall of long side walls is made longer than the inner wall connected to it to form on the side of lateral edges of projecting flat ends in each of which there are at least two openings. The length of the inner wall is equal to the distance between the legs to which it is attached. The length of the outer wall of the long side wall is equal to the length of the chargrill and the lower part of this wall is made bent to the side of the inner wall connected to it to form the shelf projecting into the chargrill after its assembly.

EFFECT: reduction in size of the chargrill during its transportation and facilitation of the process of caring for the chargrill after use.
