The technical field to which the invention relates

The invention relates to food. It can be used in food industry for the production of food.

The level of technology

An important part of a healthy diet is to eat foods that contain carotenoids. Most contain carotenoids, functional food, food supplements and medicines on the market that contains carotenoids, obtained with the use of organic solvents by extraction from plant materials, biotechnology, or through a process of organic synthesis, and does not contain cellulose containing carotenoids plant material, although the use of fiber is an important part of a healthy diet. The inclusion of cellulose containing carotenoids plant material in the product provides significant organoleptic and technological advantages, as discussed below. Another associated with these contain carotenoids products, the problem is that for their production requires organic solvents. However, the complete removal of organic solvents from the resulting product cannot be guaranteed. At the same time, the presence of traces of organic solvents in the product is totally undesirable for many consumers. Organic solvents are harmful for the participants of the production process and the environment (U.S. patent 7,557,146 B2, patent USA 2004/0131733 A1).

It was proposed to produce containing carotenoids products free of organic solvents with the use of supercritical carbon dioxide extraction of carotenoids from the containing plant material (patent application US 2004/0131733 A1, patent USA 2009/0304870 A1). However, cellulose containing carotenoids plant material is not part of the result contains carotenoids product. Also the production process is costly, includes alien with respect to the resulting product agent and may be negative for the environment due to the greenhouse effect.

Cellulose containing carotenoids plant material is not included in the composition of food composition containing a carotenoid lipid proposed in the U.S. patent 7,557,146 B2, forming representing waste solid residue. Specified proposed U.S. patent 7,557,146 B2 food composition can be regarded as the closest to the claimed invention analogue (prototype). Signs of this analogue, coinciding with the essential features of the claimed invention, include the presence of similar lipid and carotenoid.

There is a need to contain carotenoids food composition, which would include cellulose containing carotenoids plant material. And it would be very desirable that this food composition had the high biological efficiency, providing a more pronounced positive effect on the human or animal.

Disclosure of the invention

The purpose of the invention is to increase biological efficiency, ensuring a more pronounced positive effect on the organism of food composition containing carotenoids.

The task, which directed the invention is to increase biological efficiency, ensuring a more pronounced positive effect on the organism of food composition, including containing fiber and at least one of the carotenoid material of plant origin.

Provided by the invention technical result is expressed in increasing the biological effectiveness of food composition, including the component containing water, the component containing lipid, and containing fiber and at least one of the carotenoid material of plant origin, due to a decline in the specified material of plant origin of the content of water soluble substances, ensuring a more pronounced positive effect of food composition on the human or animal.

Primary composition of the invention, hereinafter referred to as "composition of the invention, includes the component containing water, the component containing lipid, and containing fiber and at least one of the carotenoid material of plant origin with reduced content of water-soluble substances. These components of the composition of the invention expressing the essence of the invention as a technical solution and form a set of essential features sufficient to achieve provided by the invention of the technical result.

Signs compositions of the invention, distinctive from the closest analogue, which is proposed in the US patent 7,557,146 B2 food composition containing a carotenoid lipid include the presence in the composition of the invention of the water and containing fibre material of plant origin with reduced content of water-soluble substances.

Component containing water can also be a component that contains the lipid, and Vice versa, as, for example, many containing water and lipid dairy products. Also component containing water, can be water, and the component containing lipid may be a lipid. Containing fiber and at least one of the carotenoid material of plant origin may contain water and/or lipid and as such be a component containing water, and/or component that contains the lipid composition of the invention. A rare example containing lipids and rich in carotenoids fruit is the fruit of SAC containing fatty acid (Ishida VK et al. Fatty acid and carotenoid composition of the gac (Momordica cochinchinensis Spreng) fruit. J Agric Food Chem 2004; 52 (2): 274-9; Ishida said Bq and other Fatty acid and carotenoids composition of the fruit of the SJC (Momordica cochinchinensis Spreng). W Agric Food Chem 2004; 52 (2): 274-9).

One of the components of the composition of the invention is containing fiber and at least one of the carotenoid material of plant origin. An important positive role of the use of fiber for human health are well known from the prior art. Persons with a high level of consumption of fiber have significantly lower the risk of developing cardiovascular disease, stroke, hypertension, diabetes, obesity, and some gastrointestinal diseases. Increased fiber intake lowers blood pressure and cholesterol levels. Increased intake of soluble fibre improves glycemia and insulin sensitivity as in people without diabetes, and diabetics. The addition of fiber in individuals with obesity explicitly promotes weight loss. Increased fiber intake has a positive influence for a variety of gastrointestinal disorders, including gastro-esophageal reflux, duodenal ulcers, diverticulitis, constipation, hemorrhoids. Prebiotic fiber enhances immunity. The use of fiber gives a similar positive outcomes in children and adults. The recommended fiber intake for children and adults is 14 g/1000 kcal. However, for example, fiber intake in adults and children USA is less than half the recommended level. More effective dissemination of information you want to increase your fiber intake in food composition and additives (Anderson JW et al. Health benefits of dietary fiber. Nutr Rev 2009 Apr; 67 (4): 188-205; Anderson Jay Dablyu and other Health effect of fiber. Of Nutra Roar 2009 APR; 67 (4): 188-205).

Fiber is a natural thickener, essential for consistency, volume and viscosity of the composition of the invention. In the food industry it is common to use additives, such as starch, pectin, guar gum, xanthan gum, and others, to control the consistency of volume and viscosity and prevent syneresis (separation liquid) in foods containing plant material. However, the use of additives, which are alien in relation to biologically active contain a carotenoid component can have its own biological activity, totally different from the profile of biological activity of carotenoid, can serve as an additional source of contamination of the product such pollutants as a means of Agrochemistry, absolutely undesirable for many consumers who are interested to get a 100% natural product. In the composition of the invention consistency, volume and viscosity easily controlled through the ratio of water content, lipid and fat plant material.

Containing fiber and at least one of the carotenoid material of plant origin may be of tomatoes, carrots, peaches, apricots, oranges, watermelons, gwv, papaya, grapefruit, pineapple, grapes, fruit GAK, kiwi or from other plants. It can be from one plant or can be a combination containing fibre and carotenoids materials of two or more different plants. It can be from fruits, vegetables, berries, roots, or other parts of plants. It can be in the form of pulp, concentrates, purees or dried material in powder form or in another form, for example in the form of solid residue generated by centrifugation or filtration concentrate plant origin.

The lipid or component that contains the lipid composition of the invention may be animal fat, butter of animal origin, fish oil, milk fat, vegetable fat, oil, or other lipid or a combination of any of them. Vegetable oil can be a corn oil, olive oil, sunflower oil, soybean oil, rapeseed oil, palm oil or other vegetable oil.

Water, fiber, lipid and carotenoids work synergistically as components of the composition of the invention. Water, absorbed in the tissue, provides the necessary consistency, volume and viscosity of the composition of the invention, as well as the desired absorption and health action fiber in the gastrointestinal tract. The water content in the composition of the invention may vary; preferably, it can be in the range from 10% to 90%, and, most preferably in the range from 20% to 85%.

β the greatest extent responsible for the bioavailability of carotenoids as lipophilic substances. In particular, the combination of water and lipid can play an important positive role for the formation of lipid droplets, which lipophilic a carotenoid can migrate into the cells of the intestinal mucosa in the process of intestinal absorption (Boileau T.W.-M. et al. Bioavailability of all-trans and cis-isomers of lycopene. Experiment Biol Med 2002; 227: 914-919; Boileau Tably.-M. and other Bioavailability all-TRANS - and six-isomers of lycopene. Experiment Biol Med, 2002; 227: 914-919) through education direct emulsions from diluted to highly concentrated in the composition of the invention or, also, during the process of intestinal absorption compositions of the invention. For example, a carotenoid can be dissolved in a supersaturated concentration drops in oil emulsion oil/water, if the droplet size is small enough (Bunnell R.H. Coloring water-base foods with (beta-carotene. Food Technol 1958; 12:536-541; Banel P.X. Staining food water-based beta carotene. Food Technology 1958; 12:536-541; patent application EP 0800824 A1). The content of lipid/water in the composition of the invention may vary; preferably, it is in the range of 1:1000 up to 99:1, and, most preferably in the range from 1:10 to 5:1. Finally, carotenoids determine the profile of biological efficiency of the composition of the invention.

The decrease in the content of water-soluble substances containing fiber and at least one of the carotenoid the material of plant origin composition of the invention, such as, for example, tomato or pineapple juice concentrate, radically changes the taste compositions of the invention and including her other food products. Water-soluble substances to the greatest extent responsible for the natural taste, typical for this contains fiber and at least one of the carotenoid material of plant origin. The decrease in the content of water-soluble substances in the specified containing fibre material gives a neutral taste contains compositions of the invention that has nothing resembling a taste source containing fibre material of plant origin. Various additional ingredients can be added to the composition of the invention with the purpose of giving to it the desired taste, the biological activity or other characteristics specified composition. An ingredient may be, for example, egg component or product, for example, for the production of mayonnaise type. Emulsifying agent can be added to the composition of the invention as an ingredient to stabilize it in the form of an emulsion. Dairy products, wheat, wheat component or product, along with other food components can also be an additional ingredients.

The proposed reduction in the content of water-soluble substances containing fiber and at least one of the carotenoid the material of plant origin composition of the invention goes beyond the conventional use of plant material in food products not only because of the dramatic changes to their taste, as discussed above, but also because of vegetable materials are usually considered as a source of water-soluble vitamins, minerals and other water-soluble biologically active substances.

The composition of the invention may include other food, which is also part of the invention. The content of the composition of the invention in the specified food product may vary; preferably, its content can range from 1% to 100%, and, most preferably, from 10% to 90% by weight of the food. Specified product supply may be in the form of the dairy products, sauces, mayonnaise, sauce for salad, yoghurt, baby food, product, diet food, puree, beverage, food animals or in the form of food product of another type.

If the specified product includes the composition of the invention, contains a carotenoid lycopene, the content of lycopene in the specified food product may vary; preferably, it may vary from 5 mg to 150 mg per 100 g of the product specified power.

The fundamental mechanism of biological effects of carotenoids in General is the same for all of carotenoids, which is not surprising, because they all have similar chemical structure and role in biological processes in plants. Chemically they are lipophilic tetraterpenes containing 40 carbon atoms grouped in 4 monoterpene, each containing 10 carbon atoms. Biologically all carotenoids are organic pigments, located in chromoplast and chloroplasts of plant cells, supported vegetable fibers, which are involved in the absorption of light, the transfer of energy and antioxidant defense.

The fundamental mechanism of biological efficiency of all carotenoids is neutralization of highly active oxygen radicals involved in the peroxide oxidation of lipids of cellular membranes (..Diplockl et. al. Functional food science and defense against reactive oxidative species. British Journal of Nutrition 1998; 80, Suppl. 1: S77-S112 (; Attiyat and other Science of functional nutrition and protection from high-level oxidative forms. British Journal of Nutrition 1998; 80, DOP: S77-S112 (). Highly active oxygen radicals are considered as an important factor various pathological processes, including atherosclerosis, male infertility, etc. it is Assumed that highly active oxygen radicals affect the function of sperm through the peroxide oxidation of polyunsaturated fatty acids in membranes of sperm (Gupta N.P., Kumar R. Lycopene therapy in idiopatic male infertility - a preliminary report. Urol Int and Nephrol 2002; 34: 369-372; Gupta N, Kumar P. Therapy lycopene in idiopathic male infertility, preliminary report. Online Ural and Nepal 2002; 34: 369-372). Membrane sperm compared with membranes of most other cells of the body are particularly susceptible to damage related to their parts lipids.

Neutralization of highly active oxygen radicals is considered as a mechanism underlying biological effectiveness of carotenoid lycopene in respect of performance enhancing sperm due to the substantial protection sperm from damage associated with free radical oxidation (Ibid.), also as biological effectiveness containing carotenoids compositions of the invention on the basis of tomatoes against performance enhancing sperm, and specified biological efficiency is increased by reducing the content of water-soluble substances containing fibre and carotenoids, material compositions of the invention, as shown in Example 1. Present in tomatoes most of the carotenoid lycopene has the greatest among other carotenoids ability to neutralize highly active oxygen radicals (Di Mascio P. et. al. Lycopene as the most efficient biological carotenoid singlet oxygen quencher. Arch Biochem Biophys 1989; 274 (2): 532-8; Di Masi P. and other Lycopene as the most efficient biological carotenoid - Converter singlet oxygen. Arch biochem of Biofiz, 1989; 274 (2): 532-8).

On the other hand, contain carotenoids and cellulose materials of plant origin, such as tomatoes, oranges, grapefruit, peaches, papaya, pineapple and other, in the General case, contain the same set of water-soluble substances, such as water-soluble minerals, salts, organic acids, sugars, amino acids. This gives grounds to consider the effect of higher biological effectiveness of the composition of the invention, includes containing fiber and at least one of the carotenoid material of plant origin with reduced content of water soluble substances, as inherent in the specified containing carotenoids compositions in General.

The decrease in the content of water-soluble substances containing fiber and at least one of the carotenoid the material of plant origin can be carried out by homogenization specified containing fibre material with water or water-containing component and the subsequent separation of the phases with the help tsentrifugirovanija, decanters, filtering or other means. The process can be repeated to achieve the required degree of decrease in the content of water-soluble substances. Further the production process of the composition of the invention may include homogenization specified containing fibre material with other components of the composition of the invention, as well as additional ingredients. Organic solvents to produce compositions of the invention is not required. Also the composition of the invention may be included in the structure of other food by the way, considering features of technology of production of this food product.

In the example below shows how this may be done invention, with the implementation of its purpose.

Example 1. A composition of the invention and use of

Tomato paste homogenized with water and centrifuged at 6000 rpm for 20 min Solid residue after centrifugation homogenized with water and centrifuged again under the same conditions.

After centrifugation received the solid residue is an containing fibre and a carotenoid lycopene - tomato material with reduced 10 times the content of water-soluble substances in comparison with tomato material received once by centrifugation tomato paste under the same conditions, i.e. at 6000 rpm for 20 min, but without prior homogenization of water and used for the preparation of product comparisons, as described below. Tomato material contains 80% water and 810 ppm (parts per million) lycopene (according to HPLC high performance liquid chromatography). To obtain the compositions of the invention tomato material with reduced 10 times the content of water-soluble substances is being homogenized with corn oil-first pressing, added to tomato material in the ratio 50:73. The resulting product hereinafter referred to as L-product (a product with low content of water-soluble substances). It contains 47,4% water, 40.6% of lipid; the content of lipid/water is approximately 86:100. The remaining 12% L-product include tomato fiber, other solid components of tomato paste, insoluble in water, and water-soluble substances tomato paste in reduced maintenance. L-product contains 48 mg of lycopene per 100 g of the product is stored at low temperature.

For preparation product comparison tomato paste centrifuged at 6000 rpm for 20 min After centrifugation received the solid residue is an contain a carotenoid lycopene and fiber tomato material in which the content of water-soluble substances are not reduced. Tomato material contains 80% water and 810 ppm of lycopene (according to HPLC). To obtain a product comparison specified tomato material is homogenized with corn oil-first pressing, added to tomato material in the ratio 50:73. The resulting product hereinafter referred to as R-a product (product, in which the content of water-soluble substances are not reduced). R-the product contains 48 mg of lycopene per 100 g of the product is stored at low temperature.

The study of the biological activity of L-product in comparison with biological efficiency of R-product was made in men with idiopathic infertility. As discussed above, the improvement of semen parameters in therapy with carotenoid been demonstrated previously.

28 men diagnosed with idiopathic infertility, age 30-42 years as volunteers interested in improvement of parameters of sperm through the consumption of food, were divided into two groups, L-group, and R-group, 14 people in each group. The concentration of sperm and sperm count progressive movement (in percent of the total number of sperm) was determined according to the who guidelines on laboratory research and treatment is a human sperm, 5th edition.

L-group 25 grams L-a product that contains 12 mg of lycopene, was used daily by members of the group within 60 days. The concentration of sperm and sperm count with the progressive movement were studied before eating and after 60 days of use L-product.

R-group 25 grams R-a product that contains 12 mg of lycopene, was used daily by members of the group within 60 days. The concentration of sperm and sperm count with the progressive movement were studied before eating and after 60 days of use R-product.

In accordance with the results of the study prior to the use of L-product average concentration of sperm in an L-group amounted to 13.9 million/ml, the average number of spermatozoa with the progressive movement amounted to 17.2%. After 60 days of use L-product average concentration of sperm in an L-group amounted to 42 million/ml, the average number of spermatozoa with the progressive movement was 60.5 per cent. The increase in the average concentration of sperm was 28.1 million/ml Increase in the average number of spermatozoa with the progressive movement was 43.3%.

In accordance with the research results before the start of use of R-product average concentration of sperm in an R-group amounted to 12.8 million/ml, the average number of spermatozoa with the progressive movement was 15.3%. After 60 days, the use of R-product average concentration of sperm in an R-group amounted to 33,7 million/ml, the average number of spermatozoa with the progressive movement was 45.3%. The increase in the average concentration of sperm amounted to 20.9 million/ml Increase in the average number of spermatozoa with the progressive movement was 30%.

As you can see from the results of a comparative study, the increase in the average concentration of sperm in L-band was 7.2 million/ml is higher than R-group. The difference growth of average sperm count progressive movement between groups was 13.3%, also with superior result in an L-group.
