Method for production of "maize mush with pumpkin puree" preserves

FIELD: food industry.

SUBSTANCE: invention relates to food industry. Recipe components are prepared. Pumpkin is cut, blanched and strained to produce puree. Maize grits are blanched until a 2.5 times weight increase. Sunflower flour is poured with drinking water and maintained for swelling. One mixes the grits (while heated), puree and flour with corn oil, sugar, salt, vanillin and cinnamon. The produced mixture is packed. Then one performs sealing and sterilisation.

EFFECT: invention allows to reduce the manufactured target product adhesion to container walls.

The invention relates to the production technology of canned food.

A method of obtaining canned "Corn porridge with pumpkin puree", providing for the preparation of the recipe components, cutting, blanching and RUB pumpkin, blanching to increase the weight by 2.5 times cornmeal, mixing the listed components when heated with corn oil, sugar, salt, vanilla and cinnamon, packing the mixture, sealing and sterilization (Collection of technological instructions for the production of canned food. Volume III. - M.: Pishepromizdat, 1963, s-394).

The disadvantage of this method is high adhesion to the walls of the container obtained target product.

The technical result of the invention is to reduce the adhesion to the walls of the container obtained target product.

This result is achieved in that in the method of producing canned "Corn porridge with pumpkin puree", providing for the preparation of the recipe components, cutting, blanching and RUB pumpkin, blanching to increase the weight by 2.5 times cornmeal, mixing the listed components when heated with corn oil, sugar, salt, vanilla and cinnamon, packing the mixture, sealing and sterilization according to the invention, when mixing in addition use sunflower meal, before you see what sevanam pour drinking water and allowed to swell, and the components used in the following ratio of expenses, parts by weight:

corn grits238
pumpkin509,1
sunflower meal13
corn oil60,6
sugara 50.5
Sol8,1
vanilla0,1
cinnamon0,1
waterto the output of the target product 1000.

The method is implemented as follows.

Prescription components prepared according to the traditional technology.

Prepared pumpkin, cut, blanched in hot water and wipe with getting puree, which is directed to the mixing immediately after cooking or after storage in canned, frozen or chilled.

Prepared corn grits are blanched in hot water to increase the weight by 2.5 times.

Prepared seed flour on THE 9146-034-27147091-09 pour drinking water in the ratio by weight of about 15 and incubated for swelling.

These components in the prescription mix ratio when heated with corn oil, sugar, salt, vanilla and ground cinnamon.

The resulting mixture was Packed, sealed and sterilized to obtain the target product.

The cost components are based on norms of waste and losses of the respective raw materials.

Obtained according to the described technology canned food organoleptic properties similar to the product on the closest analogue.

To confirm the technical result of cans No. 8 containing products obtained according to the described technology and the closest analogue was heated to a temperature of 70C, dissected and mounted in the tripod upside down. Experienced product fell out of the banks, and the product is the closest analogue is not.

Thus, the proposed method allows to reduce adhesion to the walls of the container obtained target product.

The method of producing canned "Corn porridge with pumpkin puree", providing for the preparation of the recipe components, cutting, blanching and RUB pumpkin, blanching to increase the weight by 2.5 times cornmeal, mixing the listed components when heated with corn oil, sugar, salt, vanilla and cinnamon, packing the mixture, sealing and sterilizes the Yu, characterized in that, when mixed optionally use the seed flour, which before mixing pour drinking water and allowed to swell, and the components used in the following ratio of expenses, parts by weight:

SUBSTANCE: present invention relates to application of distillery slop and distillery slop extracts as an flavouring agent or salty taste perception enhancer in food products compositions. The method for production of a flavoured food composition with usage of dried distillery slop involves grains fermentation and distillation to produce distillery slop containing grain remains and soluble substances, drying to produce dried distillery slop (DDGS), selecting particles of relatively lighter shade from the dried distillery slop, the particles having "L" value equal to at least 60 and "b" value equal to at least +40 as measured against L*a*b Hunter Instruments colour grade. The selected high quality distillery slop is added to the food product in an amount from nearly 0.1% to less than nearly 10% of the whole weight of the food composition.

EFFECT: one ensures an inexpensive alternative to sodium-containing and other taste additives; additionally, one creates an opportunity to reduce the total content of sodium in food products.
