FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to production of cedar milk, a multifunctional preventive food product. The method envisages milling unpeeled cedar nuts and unpeeled walnuts in water, emulsification, extraction with water at a ratio of raw material to water being 1: (3 -10). Then one performs heterogeneous structure stabilisation by bactericidal treatment under pressure in high-temperature mode. Then one performs repeated milling and homogenisation by mechanical cavitational treatment.

EFFECT: invention allows to produce a multifunctional preventive food product in the form of a stable heterogeneous magma (emulsion, suspension) enriched with biologically active substances, with improved taste properties and extended storage life.

The invention relates to food industry, namely, to obtain food and multipurpose prevention of food.

A method of obtaining food type milk cedar, comprising grinding the kernels of cedar nuts, mixing and extraction in water, the heat treatment at a temperature of 40-70C., filtering heterogeneous systems and homogenization of the purified fluid - final product (EN 2202259, 20.04.2003). The disadvantage of this method is the limited use of biologically-active components of the kernels of cedar nuts due to incomplete use of the components of raw materials, inadequate heat treatment, which does not allow to obtain a sterile product with a long shelf life, and high cost of the final product.

The closest analogue (prototype) announced proposals is a method for cedar milk, including grinding raw pine nuts until uniform in color mass, extraction with water in the presence of pectin, linking the natural bitterness of tannins and resinous substances, filtration of the solid residue, homogenization and bacteriostatic treatment in the low-temperature mode, simultaneously affecting ultrasound. The resulting cedar milk with improved flavor characteristics about the fully also and high biological activity (RU 2311037 C2, 27.11.2007).

The disadvantage of the prototype is the instability of the emulsion-suspension, short shelf life of the food product, complicating the implementation and limiting the market. Loss of cellulose polysaccharides, and other water-insoluble substances, drop them in the sediment in the final product do not contribute to the improvement of the quality of the final product.

Objective of the claimed invention is to improve the quality multifunctional food supply, expansion of the resource base, increase the yield of the final product, a product with a stable heterogeneous structure of the emulsion-suspension and long shelf life.

This object is achieved in that a method of obtaining cedar jelly, multi-preventive food product according to the invention, shredding untreated cedar and raw walnuts in water, emulsification, extraction with water at a ratio of raw materials:water 1:(3-10), stabilization of heterogeneous patterns bactericidal treatment under pressure in high temperature mode, the secondary grinding and homogenization of the mechanical cavitation effect.

The technical result of the proposed method is to obtain cedar jelly, multi-preventive food in the de stable heterogeneous suspension - emulsion-suspension enriched with biologically active substances, with improved taste and long shelf life.

The resulting milk is a homogeneous mixture of brown, with a wide range of taste and medicinal characteristics: sweet and spicy taste and smell of cedar nuts, pronounced signs of the presence of tannins, flavonoids and antioxidants, as well as substances found in kernels, on the external and internal side of the shell of cedar and walnut - all essential amino acids, minerals, vitamins, unsaturated fatty acids.

Joint use of untreated cedar and raw walnuts in the claimed method allows to increase the biological activity and taste of the food. Grinding raw nuts in a liquid, emulsification and extraction of cedar and walnut when the declared mode, namely, the water at the ratio of raw materials:water 1:(3-10) contribute to a better dissolution of the constituent components of walnuts and pine nuts, and allows to increase the yield of biologically active substances.

The stabilization of the obtained heterogeneous patterns bactericidal treatment under pressure in high temperature mode, the temperature is about 130C) allows you to completely neutralize the micobacteria mold cedar and walnut and increase the shelf life of the finished product.

Secondary grinding and homogenization of mechanical cavitation effects allow further increase the output easily digestible biologically active components, raw nuts, and get highly heterogeneous suspension - emulsion-suspension.

The invention is illustrated by the following examples.

Example 1.

Raw materials - cedar nuts are washed and cleaned from mechanical impurities. Then raw nuts crushed in a small amount of liquid in the mixer mode 800-1500 rpm for 1-2 min and subjected to emulsification. Next, the resulting mixture is poured with water in the ratio of raw materials:water 1:3 and the extraction is carried out. Extraction contributes to the dissolution of the constituent components of walnuts and pine nuts. An unstable emulsion-suspension is filtered through a nylon mesh with a mesh of 0.1 mm, and then subjected to a bactericidal treatment under pressure at high temperature (130C). The resulting emulsion-suspension is placed in a known rotary-cavitation device with built-in pump, crushed particles in a high speed closed loop, achieving powerful cavitation that occurs when simultaneously rotating blades of the rotor and stator. In the process of mechanical cavitation effects is the homogenization of the suspension. P is obtained without sludge stabilized suspension is poured into a glass container, sterilized, cooled and receive the finished product, the retention period which is twice the shelf life of the product obtained by the prototype.

Example 2.

Method of preparation of multifunctional preventive food product similar to example 1, except that the extraction of raw nuts the ratio of raw materials:water is 1:10.

Thus, the claimed method allows to obtain multifunctional preventive food product in the form of stable heterogeneous suspension - emulsion-suspension enriched with biologically active substances, with improved taste and long shelf life.

The resulting food product has all the healing and nourishing properties of cedar and walnut, is an additional source of nutrition for malnourished and debilitated patients with various diseases, helps to maintain immunity. Multi-functional food derived the claimed method can be used in marching, military, and other emergency conditions as readily digestible and rapidly quenches the hunger means.

SUBSTANCE: method includes preparation of candied roasted nut mass, formation of a shell of the candied roasted nut mass, filling the shell with a filler containing additives, coating and chilling the shell filled, produced products upper surface decoration with subsequent finished products delivery for wrapping and packaging. For the candied roasted nut mass preparation a mixture of recipe components, preliminarily heated to 80-95C, is boiled out in a thin layer at 140-170C during 5-30 minutes until moisture content is 1-2 %. The shell formation is performed by way of dosing hot candied roasted nut mass into hemispherically shaped cells in a quantity required to produce a 0.5-3.0 mm thick candied roasted nut shell and applying pressure to the candied roasted nut mass till homogenous distribution of candied roasted nut mass across the mould. Moulds containing the produced candied roasted nut shell are chilled to15-18C and filled with a filler containing additives such as whole hazelnuts or ground nuts or ground coffee beans. Applied onto the filler is 28-32C hot chocolate coating until the filler complete coverage and a candy bottom formation. The moulds are chilled to 11-16C. The finished products are removed from the moulds by way of the latter 180 upturning and placed onto a conveyor to be delivered for coating. Decoration is performed by way of applying a zigzag milk chocolate pattern onto the coated products upper surface.

EFFECT: invention is aimed at the production technological process simplification and production of sweets characterised by high quality, a flaky consistence and a piquant cream-and-nut taste.

SUBSTANCE: invention relates to a method of processing and forming food products with a high content of nuts and seeds. The method for production of multiple nut mass hexagons involves a number of stages: a) one mixes the initial food product with binding syrup and produces a nut based mixture; the mixture contains from nearly 60% to nearly 85% of the said initial food product; b) one puts the said nut based mixture with a controllable temperature of plates on a conveyor for plates fabrication; the conveyor moves in a longitudinal direction; c) one presses the said nut based mixture for producing a plate with the help of at least one press roller; d) one uses at least one rotating device for longitudinal cutting, rotary speed whereof exceeds the speed of a plate moving for simultaneous drawing and cutting of the said nut plate into longitudinal strips; e) one cuts the said longitudinal strips in a transverse direction for producing multiple nut mass hexagons.

SUBSTANCE: invention is related to food industry, in particular, to confectionary production. First, treacle is heated to 110-115C and mixed with fructose powder till complete dissolution of fructose. The produced mixture is further heated to 120-125C. Vegetal raw material selected from the following list is added to the mass obtained: sunflower seeds, sesame seeds, hazelnuts, peanuts or mixtures thereof. The mass, continuously stirred, is boiled out at 130-135C till dry substances content is 90-96%. One adds a flavouring agent to the mixture and chills it to 70-75C. SUBSTANCE: method implies melting honey which is prepacked in a dry-air heating chamber during 10-14 hours so that temperature of the melted honey is maintained in the range of 50-55°C, and honey humidity is kept constant. Then melted honey is poured from the container into the collecting jar through the mesh filter with holes diameter of 2-3 mm which is covered with sieve or gauze. Afterwards honey refiltering, settling for 8-12 hours (45-50°C), removing foam with impurities, holding it for 3-4 days, reheating and returning the taken away honey follow. After settling honey is supplied to the mixer where nuts and/or seeds kernels or dried fruits are additionally introduced to it. Nuts and/or seeds kernels are beforehand inspected, washed, dried and crushed down to the size of 1.5-3 mm. Dried fruits are steeped beforehand in cold water for 1-2 hours, washed, inspected, rinsed with shower, dried and crushed down to the size of 1.5-3 mm, and the crushed mass is laid out in a layer 5-10 mm thick and treated with bactericide irradiator for 2-3 minutes. The obtained honey-nut or honey-fruit mixture is homogenised for 5-10 minutes producing paste which is then packed and sealed.

EFFECT: invention allows maximal preserving of biologically active substances and antioxidants in the end product.

SUBSTANCE: invention relates to food industry and refers to preparation of a food product having immunostimulating effect. The composition of ingredients for "Honey with trepang extract" food product consists of natural honey and Far-Eastern trepang at a weight ratio of honey - 1080%, trepangs - 2090%. One preliminarily withdraws water from trepang that is cut up (while whole) and/or cut into pieces and/or crushed. The composition may additionally contain preserving agents, ethyl alcohol and phyto-extracts. The method for production of honey with a trepang extract includes trepang skinning with preliminary withdrawal of water from it, cutting, maintenance, filtration and packing. Trepang is mixed with honey and maintained for 2-3 months without exposure to light at a temperature from 0 to +12C, permanently stirred at least once a day. SUBSTANCE: biomass production envisages cultivation of at least one lactic acid bacteria strain producing vitamin K2 under conditions of resting cells. One performs at least primary cultivation of bacteria under conditions of respiration sustention for production of the primary culture or pre-culture in a medium containing at least one compound containing a haem nucleus, the end concentration being at least nearly 0.5 mcg/ml. A fat-containing milk cultural medium is inoculated with live bacterial cells in an amount of approximately 108 CFU/ml - 1011 CFU/ml. The inoculated medium is fermented during approximately 4 hours - 48 hours at a temperature of approximately 4C - 50C. SUBSTANCE: invention relates to biologically active food additives intended for prevention of metabolic derangements, cardiovascular and other disorders and adjuvant therapy for reduction of their development risk. The biologically active additive includes a fat modulus represented by marine animal oil with polyunsaturated omega-3 acid content no less than 20 wt % and a carbohydrate modulus that are placed into individual chambers at a ratio of (1-3.33):(23.33-25.67) respectively. Mixing of the fat and carbohydrate moduli is performed immediately prior to consumption. The carbohydrate modulus includes, wt %: fructose - (10-12), sodium alginate - (0.7-1.5), water - balance. The biologically active additive production method envisages preparation of the carbohydrate modulus: sodium alginate and fructose are dissolved in individual vessels with boiled water with temperature no higher than 100C, added into boiling water while stirring. After the sodium alginate and fructose complete dissolution the solutions are mixed till the required components ratio is reached, cooled till the temperature is 50-65C and filtered immediately prior to the carbohydrate modulus placement into the chamber.

EFFECT: invention allows to produce a biologically active additive with extended storage life - no less than 24 months, without detriment to quality characteristics and with preservation of good organoleptic indices.

The method for production of a biologically active white bean additive enriched with selenium envisages preparation of flour, its defatting, enzymic hydrolysis, filtration or centrifugation, drying, introduction of a filler and stirring till homogeneous mass formation. Defatting is performed with 96% alcohol during 15 minutes. Enzymic hydrolysis is performed using Pepsin GZKh enzyme preparation in an amount of 0.5% of the dry weight and Celloviridin G20Kh in an amount of 0.1% of the dry weight at pH 5.0-6.0 and at a temperature of 45C for 4 hours with periodical stirring every 30 minutes. Drying is performed at a temperature no higher than 45C. The filler is represented by sorbite introduced at a ratio of 1:1.

The method for production of a biologically active white bean additive enriched with selenium envisages preparation of flour, its defatting, enzymic hydrolysis, filtration or centrifugation, drying, introduction of a filler and stirring till homogeneous mass formation. Defatting is performed with 96% alcohol during 15 minutes. Enzymic hydrolysis is performed using Pepsin GZKh enzyme preparation in an amount of 0.5% of the dry weight and Celloviridin G20Kh in an amount of 0.1% of the dry weight at pH 5.0-6.0 and at a temperature of 45C for 4 hours with periodical stirring every 30 minutes. Drying is performed at a temperature no higher than 45C. The filler is represented by sorbite introduced at a ratio of 1:1.

SUBSTANCE: inventions group relates to production of functional biologically active products of natural silk, in particular, of silk proteins which may be used in food, pharmaceutical and cosmetic industries. The method characterisation is as follows: Bombyx Mori mulberry silkworm cocoons are cut up for larvae removal, milled, placed into water and maintained for no less than 5 minutes. Then the soaked raw material is placed into a vessel and poured with water, incompletely filling the vessel, the weight ratio of the raw materials to water being (0.5-1.5):(4.5-5.5). Then the vessel is closed up, heated up to 200-300C and maintained at that temperature during 10-90 minutes. Then one performs quick cooling to produce the end functional biologically active product in a solution form. Alternatively, the method envisages drying the produced solution till complete drying to produce a functional biologically active product in a powder form. The inventions group allows to simplify the process of preparation of a biologically active food product based on natural silk due to fewness of the process stages, exclusion of expensive reagents, hydrolysate preparation time reduction and simpler equipment usage.

EFFECT: ready products do not contain impurities and contain maximum quantity of active substances.
