FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to functional purpose food products necessary for alimentation of sportsmen who specialise in strength and speed-and-strength sport as well as persons occupied with heavy manual labour. The functional food product with ergogenic properties containing vegetable phospholipids, flavouring additives, ascorbic acid, citric acid additionally contains peeled red rice powder. The powder is produced by way of crushing peeled red rice, then it is minced in fine helix-rotating film of 0.1-1.0 mm at pulsing pressure gradient of 10-30 MPa and temperature of 25-30C. The components are used at the following weight ratio %: vegetable phospholipids - 25.0-30.0, flavouring additives - 0.1-1.0, ascorbic acid - 1.0-5.0, citric acid - 0.5-1.0, peeled red rice powder - balance.

EFFECT: invention allows to produce a functional food product with high ergogenic properties.

The invention relates to food industry, namely to food functionality, necessary for power athletes, specializing in strength and speed-strength sports, as well as to supply persons engaged in heavy physical labor.

Known functional food product containing vegetable phospholipids, flavour, ascorbic acid, citric acid and flour from cereal malt (U.S. Pat. 2240015 EN, publ. 20.11.2004. Bull. 32).

The disadvantage of this functional food product is that it is not sufficiently effective when used in the diet of persons engaged in physical labor, as well as athletes in the recovery period after intense power and speed-power load.

The objective of the invention is the creation of a functional food product with high ergogenic properties, i.e. able to quickly restore the body after intense power and speed-power load.

The task is solved in that the functional food product containing vegetable phospholipids, flavour, ascorbic acid and citric acid, which has ergogenic properties, further comprises a powder of shelushenko red rice, obtained by crushing and PEFC is blowing grinding in a thin, the rotating spiral film thickness of 0.1 to 1.0 mm in the case of pulsating pressure gradient of 10-30 MPa and a temperature of 25-30C, in the following ratio, wt.%:

The technical result is the achievement of high ergogenic properties of the claimed functional food product.

Data characterizing the ergogenic action of the claimed functional food product, by athletes involved in strength and speed-strength sports nutrition which included the claimed functional food product.

A control group of athletes received the same diet, but with the inclusion of a known product.

The study was carried out within 3 months.

Experimental studies have shown that directional reception within 30 days of food and fu is a high product in the amount of 70 g/day (2 admission, dissolve in 200 g of water and take after a workout or on days of rest in the evening) helps to increase power and life index, speed-strength endurance and special physical training to improve athletic performance).

Ergogenesis properties of the claimed functional food product illustrated by the examples, the original figures which served as product composition, as determined by indicators force index, speed-strength endurance and overall physical performance and special operational.

The claimed functional food product is illustrated by examples.

Example 1. Take 25,0 g vegetable phospholipids, mix them with 5.0 g of ascorbic acid and 0.5 g of citric acid, add 0.1 g of Apple flavoring and crushed. This mixture is injected to 69.4 g of powder of shelushenko red rice, obtained by crushing and subsequent grinding in a thin, rotating spiral film thickness of 0.1 mm in the case of pulsating pressure gradient of 10 MPa and a temperature of 30C., then the mixture is crushed.

Food functional product contains, wt%: vegetable Foz fribidi - 25,0; flavour - 0,1; ascorbic acid - 5,0; citric acid - 0.5; powder of shelushenko red-rice - 69,4.

Example 2. Take the 30.0 g of vegetable phospholipids, mix them with 1.0 g of ascorbic acid and 1.0 g of citric acid, add 1.0 g of banana flavoring and crushed. This mixture is injected 67,0 g of powder of shelushenko red rice, obtained by crushing and subsequent grinding in a thin, rotating spiral film thickness 1.0 mm in the case of pulsating pressure gradient of 30 MPa and a temperature of 25C., then the mixture is crushed.

Food functional product contains, wt%: plant phospholipids - 30,0; flavour - 1,0; ascorbic acid - 1,0; citric acid - 1,0; powder from shelushenko red-rice - 67,0.

The preserves production method involves treatment of girasol tubers, their coarse milling, mixing with whole feijoa fruits, blanching the produced mixture with super high frequency energy at a specific radiation power of 440-700 W during 2-3 minutes. Feijoa fruits are introduced in an amount of 10-30% of the total weight. Then one performs separation of extracted juice, straining with simultaneous peel separation, milling the peel, mixing all the components in a mixer, homogenisation and deaeration. Then one performs heating of the produced ready product in a vacuum apparatus, packing, closuring and sterilisation.

EFFECT: invention allows to reduce heat treatment duration and enhance the ready preserves stability to stratification as well as to produce a product with enhanced food and biological value.

SUBSTANCE: invention relates to food industry, in particular, to its confectionary branch and may be used in sugar confectionery goods production. According to the method at first one mixes fructose with powdered milk in a boiling apparatus. The produced mixture is dissolved in water taken in amount of 30-35 wt % of the mixture weight with gradual heating of the produced solution to a temperature of 115-120C with continuous mixing. One introduces into the solution molasses heated up to 65-75C, the melted fat component and an emulsifier. The produced mixture emulsification is performed during 3-5 minutes. Then the mixture is boiled down to a temperature of 132-136C until the dry substances content in the mixture is 94-95%. The produced mass is cooled to a temperature of 90-92C. A flavouring agent is introduced into the mass. The mass is moulded in the form of individual goods which are wrapped in the moulding-wrapping device at specified choice of the components ratio.

EFFECT: invention ensures expansion of the range of preventive purpose toffees with dietary and diabetic properties by reduction of the carbohydrates and calorie content and the toffee quality improvement.

EFFECT: method allows to extend storage life of the product based on cereal crops without chemical components utilisation, to preserve nutritive properties, plasticity and to ensure a high level of the product organoleptic properties.

SUBSTANCE: invention relates to food industry, in particular, to production of a powder food product of grains of barley, corn, buckwheat by biotechnological methods and may be used in non-alcoholic beverage, bakery, meat and dairy sub-branches of food industry as well as in manufacturing special alimentation for immunocompromised people. The method envisages usage of barley, corn, buckwheat grains which are cleared of grain impurities, dust, metal contaminations, sorted according to grains sizes, washed; alloy is removed, grains are disinfected; every cereal crop grains are soaked separately. barley - at a temperature of 12-13C till relative moisture content is 42-44%, corn - at a temperature of 19-20C till relative moisture content is 45-47%, buckwheat - at a temperature of 14-15C till relative moisture content is 42-44%; grains are sprouted during 6-7 days till maximum activity of enzymes of cytolytic, proteolytic, amylolitic action, then green malts are mixed at a weight ratio of 1:1:1, milled till the mass homogenisation and extracted with water duty 1:1 during 30-35 minutes at a temperature of 35-40C, the milled mass is passed through a pulping machine for husks separation, homogenised, dried till relative moisture content is 2.5-3.0% and milled till particles size is 1-250 mcm.

EFFECT: method allows to enhance quality of the ready powder product due to increase of its food and biological value, improve its preventive properties and extend duration of the product storage life.

SUBSTANCE: present invention relates to production of soluble oat or barley meal. The method envisages mixing the initial meal mixture (containing whole oat or barley meal and at least one antioxidant) with a suitable enzyme solution, production of the initial mixture with the enzyme, its heating till the temperature is nearly 120F - nearly 200F during a period of time effective for beginning of starch molecules hydrolysis and extraction of the produced mixture for starch hydrolysis continuation and further for gelating and steaming of the mixture with production of oat or barley meal. Additionally, one describes a method for production of a beverage and a food product containing soluble oat or barley meal.

EFFECT: method, according to the invention, is easier, cheaper and less time-intensive in comparison with previously known methods.

SUBSTANCE: invention relates to a method for preservation of olive oil contained in a frozen paste produced of milled olives. The olive oil preservation method consists in freezing a paste produced of milled olives at a temperature from nearly 0C to -40C before malaxation.
