FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular to a functional food product immediately consumed as a medical and preventive food product. The functional food product consists of vegetable phospholipids, ascorbic acid, fat-soluble vitamins - vitamin E and β-carotin, sugar or its substitute, water-soluble vitamin B1, B2 and B6, ferric sulphate, a dry water-soluble extract of rosehips, a dry water-soluble extract of common licorice roots.

EFFECT: invention allows to impart high interseptum protective properties to the functional food product.

The invention relates to the food industry and can be used to obtain a functional food product, used for direct consumption as a therapeutic and prophylactic product.

Known phospholipid food product "Vitols-cocktail"consisting of vegetable phospholipids, ascorbic acid, citric acid, fat-soluble vitamins, flavour and sugar or substitutes (Patent No. 2134986 EN, IPC 23D 9/00, 9/02, 9/013. Appl. 20.02.1998. Publ. 27.08.1999. Bull. No. 24).

A disadvantage of the known phospholipid food product is not high enough membranoproliferative properties.

The objective of the invention is the achievement of functional food product high lipoic properties.

The task is solved in that the functional food product with lipoic properties, consisting of vegetable phospholipids, ascorbic acid, fat-soluble vitamins - vitamin E and β-carotene, sugar or a substitute, additionally contains a water-soluble vitamin B1In2and In6sulphate of iron, dry water-soluble extract of rosehip and dry, water soluble root extract licorice, with a ratio of initial components, wt.%:

The technical result is to give a functional food product high lipoic properties.

Lipoic functional properties of food product has been tested on growing white rats, diets which have introduced the claimed product - 25% forage diet (2 gr experienced PPI 15 animals) and known product (control group - 15 animals).

Feeding was carried out on the principle of "plenty" with free access to water.

As the destroyer of cellular membranes used Ecotoxicity product - mycotoxin T-2, which was introduced animals pre-treated for 4 weeks experienced or control diets with inventive and well-known product, in accordance with the examples, the original share of which was the composition of the product.

The mycotoxin T-2 was administered orally in the form of a 0.1%solution at a dose of 1 mg/kg for 9 days. Then, animals were scored and conducted research below.

Lipoic properties of the claimed functional food product are illustrated by examples and figures shown in the table.

Example 1. Mix 4,50 g vegetable phospholipids, of 0.60 g of vitamin E and 0.05 g of β-carotene, separately mixed 3.00 g of ascorbic acid, 0.04 g of vitamin B1, 0.06 g of vitamin B2, 0.08 g of vitamin B6, 0.10 g of iron sulfate, 40,00 g of dry water-soluble extract of rose hips, 49,07 g of dry water-soluble extract of licorice root and 2.50 g of sugar, then combine both mixtures by grinding to obtain a fine powder.

Food functional product contains, wt%: plant phospholipids - 4,50, vitamin E is 0.60, β-carotene - 0,05, ascorbic acid - 3,00, vitamin B1 - 0,04, vitamin B2- 0,06, vitamin B6to 0.08, ferric sulfate, 0,10, dry water-soluble extract of rose hips - 40,00, dry water-soluble extract of licorice root - 49,07, sugar - 2,50.

Example 2. Mix of 6.00 g of vegetable phospholipids, 0.40 g of vitamin E and 0.10 g of β-carotene, separately mixed with 2.50 g of ascorbic acid, 0.06 g of vitamin B1, 0.04 g of vitamin B2, 0.10 g of vitamin B6, 0.05 g of ferrous sulfate, 45,00 g of dry water-soluble extract of rose hips, 43,75 g of dry water-soluble extract of licorice root and 2.00 g of sugar substitute, then both mixtures are combined by grinding to obtain a fine powder.

Food functional product contains, wt%: plant phospholipids - 6,00, vitamin E - 0,40, β-carotene - 0,10, ascorbic acid - 2,50, vitamin B1- 0,06, vitamin B2- 0,04, vitamin B6- 0,10, ferric sulfate 0,05, dry water-soluble extract of rose hips - 45,00, dry water-soluble extract of licorice root - 43,75, sugar substitute is 2.00.

From the table it is seen that the inventive functional food product has a higher in comparison with the known lipoic properties, as his direct use of the liver to a lesser extent suffer from the toxic effects that a confirmation is eridano postmortem studies. The claimed functional food product has a protective effect on membranes of rat liver, namely, activated enzyme system lysosomes.

Use in the diet of the claimed product has a more effective protective effect on the activation of the processes of oxidation in the liver, intensified by the mycotoxin T-2, resulting in the consumption of the proposed product in comparison with the known there is an increase in the stability of the erythrocyte membrane.

Thus, the claimed functional food product has a high lipoic properties and can be recommended for direct consumption as a self prophylactic or on the background of the General diet with alcohol or other intoxication, chronic radiation sickness, epitropic poisoning.

SUBSTANCE: invention relates to food industry and can be used for preparation of food products for medical and preventive purposes. The method envisages preparation of a mixture of oatmeal and water or oatmeal and water and dairy whey or oatmeal and water and milk taken at a ratio of (3-6):1. For the mixture preparation one uses water heated to 39 - 50°C. Then lactic acid bacteria and/or bifidobacteria are added to the mixture and the latter is fermented to produce a fermentation product. The fermentation product is diluted with water till the fermentation product to water ratio is 1:(8-12). Then one proceeds with thermal treatment of the diluted product at a temperature of 76 - 100°C to produce a thermally treated fermentation product which is chilled; then normal gastrointestinal microflora cells are added to the chilled thermally treated fermentation product.

EFFECT: invention enables simplification of the target product production process, quality enhancement due to production of a product with a homogenous consistence, improvement of organoleptic properties, infusion of a light cherry kernel tone into the aroma, extension of storage life, protein content increase and survival of normal gastrointestinal microflora cells.

SUBSTANCE: invention relates to food industry and may be used in production of combined high-protein products and food concentrates. Method includes preparation of protein-mineral paste by soaking soy seeds in water, sprouting until sprout length is 10-20 mm, boiling of sprouted seeds in water at the temperature of 100°C with exposure of 30-35 minutes and grinding of seeds to paste-like condition. Mixing of protein-mineral paste with flour cereal component produced on the basis of either buckwheat or barley or wheat or corn or millet or oat or rice cereal at the ratio of 1:1 and making dough on the basis of mixture. SUBSTANCE: invention refers to a method of production of crushed product, from crushed whole grain, such as ready-to-eat cereals and sweet and salty snack products such as chips of crushed whole-grain maize obtained at continuous production by granulation of agglomerates which has undergone boiling, tempered whole grain particles. Undergone boiling whole grains such as maize and other gluten-free grains or grains with low-gluten tend to become solid and rubber-type after boiling during the processes of cooling and tempering. Granulation can be carried out at a pressure of about 200 psi to 600 psi, preferably from about 400 psi to 500 psi. The temperature of granulation can be adjusted to ensure temperature of grains at the outlet of the granulator from about 80°F to about 120°F, preferably from about 90°F to about 110°F.

EFFECT: granulation leads to production of whole grains with a soft, plastic texture which can break up into dense mesh sheets based on flow production.
