The disadvantages of this method are:

- canning inside the values is sodium chloride in the amount of 6-8% by weight of raw materials, which leads to decreased activity of enzyme systems;

the process of hydrolysis is carried out without the participation of the water, only due to the moisture contained in the raw materials, which reduces the yield of enzyme preparation.

The technical object of the present invention is a method for enzymatic preparation of proteolytic action of the internal organs of the fish, involving the use of anolyte ECHO-rinse water raw Catolica for the process of autolysis.

The technical result of the proposed method is an improvement of the method: reducing the number of insertion preservative (sodium chloride), reagentless the creation of pH, reduction of duration of the process of autolysis, increase hygiene production.

It is achieved by the fact that after washing the internal organs of fish without sexual products rinse the anolyte electrochemically activated (ECHO) of water, and the process of autolysis carried out using Catolica in the amount of 30% by weight of raw materials for a period of not more than 2 hours at a temperature of 40°with the addition of 3-4% by weight of raw materials sodium chloride for canning.
