Chamber-type ir furnace for thermal processing of food products

FIELD: food industry.

SUBSTANCE: IR furnace can be used for processing food products including meat. Furnace has case provided with isolation, working chamber, inspection hole made of heat-resistance material to watch is product is ready, top IR-radiators mounted in device for adjusting its position, lower IR radiators mounted stationary, tray mounted in grooves built in side walls of working chamber to fix distance from radiators to object, mode controller and power application voltage controller. Timer is provided onto panel of furnace. Furnace can be used as at cafes and restaurants and at home for cooking as well as heating ready dishes.

EFFECT: simplified design.

 

The invention relates to food industry, household and community food, namely food production, including meat products.

A device for thermal treatment of food products containing mechanically interconnected upper and lower parts of the support elements for mounting on a horizontal surface and placed in the upper part of the source of infrared radiation, the upper part is made in the form of a closed chamber on one side of which is a window for transmission of the radiation source, while the upper and lower parts are connected through fixed on the lower part of the uprights, on which the upper part is mounted for movement in a vertical direction, rotation around a horizontal axis and fixation, and the lower part is made with ledges to install them utensils for processed products [1].

The disadvantage of this device is the bulkiness and complexity of the design.

Currently, widespread series of microwave ovens of different firms and the market is full of different furnaces that use different types of heating.

Known microwave German company "Bork" for thermal treatment of food products in the combined mode: in Sodeistvie microwaves and infrared radiation, mode "grill mesh round stand, rotary switch functions [2].

The disadvantage of this furnace is a slow heating of the product, since the emitters are located in the corner of the upper part of the body below the grid, in this method, the heating of the product is carried out very slowly, unevenly, so that the emitters are under the net, which reduces the intensity of the radiation mode "grill" practical for thin meat, meatballs, chicken wings.

There is also known a method for thermal treatment of food products in a microwave oven company "Ferrete similarly as in the description of the method of heat treatment in the second case, meat products placed on the grill grid, in this furnace also has a mode "grill"in which electricity is only supplied to the heating element, the power 100, 80, 60, 40% [3].

The disadvantage of this device is the slow heating of the product, as well as in the second case, the emitters are located in the corner of the upper part of the body below the grid, which reduces the radiation intensity due to reflection from the surface and creates an uneven radiant flux over the entire surface of the product, resulting in the inevitable local overheating and burning of the product, also this method is practical only for onky layers of meat, steaks, chops, chicken sausages

The invention aims to remedy these disadvantages.

To do this, in the infrared furnace chamber type for thermal treatment of food products IR-radiation, comprising a housing with insulation, a working chamber observation window made of heat-resistant glass, IR emitters, controller modes, under, according to the invention, the IR emitters are mounted horizontally in the upper and lower parts of the chamber, with the lower IR emitters stationary, while the upper with adjustable distance product with a device for automatic regulation of the position of the emitter, representing separable, and the distance to the bottom of the IR emitters is regulated by adjustment of the pod on the provided slots, built-in on the side walls of the chamber, with the lower IR emitters depending on the product to be processed can be disabled using the control modes.

The novelty of this device is the simplicity of design, compact, table cell, it can be used as in the sphere of public catering, and in the everyday life not only for the preparation of culinary dishes, but also for heating ready meals, for some types of culinary products, including meat, developed modes that are installed in the furnace using the controller the mode with the software also a device for automatic regulation of the IR emitters, the furnace is supplied with pods of various shapes and of various materials: ceramic (different thickness, the optimum thickness of the ceramic hearth were selected by the method of the designed experiment), mesh and solid metal, and porcelain.

The authors, based on previously obtained results and their personal experimental studies, the task of the invention is directed to develop methods of thermal effects and devices in which these methods can be realized. In the proposed device meats retain their nutritional value and have compared with the known high organoleptic taste and healthy properties, persisting for a long time. Offers a simple and economical method of heat treatment of not only meat, but also other various products, and also a device for implementing the proposed methods.

Technological cycle of production of food products, including meat products, includes heat treatment of the product by infrared rays, wherein the infrared emitters are built with two sides at the top and bottom parts of the casing of the furnace chamber type without protective devices, in connection with the saving of power consumption on sexinyourcity, as some part of energy is spent on heating of the protective devices.

Heat treatment can be performed on different baking sheets or pods of various shapes and of various materials: ceramic (various thicknesses), porcelain, wire, solid metal.

The invention is illustrated in the drawing, which shows the furnace in the front section.

The furnace consists of a housing 1 with insulation 2, the working chamber 3, a viewing window made of heat-resistant glass (not shown) to monitor the readiness of the product, the top of the IR emitters 4, installed in the device 5 to control its position, the bottom IR emitters 6 installed stationary hearth 7 installed in slots 8, built on the side walls of the working chamber 3, for fixing the distance from the emitters of the product to the object 9, the selector switch, or voltage regulator power supply (not shown)on the panel of the furnace is equipped with a timer time

The oven works as follows.

Depending on the product to be processed, control modes determine the processing mode. Open the car door. Using devices for automatic control of the position of the emitters 5 set the distance between the top of the IR emitters 4. The processing object placed on the under 7 and placed in the working chamber 3 in the grooves 8 on the distance from the bottom is x IR emitters 6 depending on the selected mode. Close the door, and include a selector switch and timer time and produce a heat treatment. In the process of heat treatment depending on the mode provided in the furnace off the bottom of the emitters of the control modes. The readiness of the product determined visually or in accordance with the exhaust mode to disable the timer.

The quality of the meat processed in the proposed furnace, had a high organoleptic quality and high nutritional value, which is confirmed by the analysis of amino acid composition in comparison with preparation carried out in the known microwave ovens, which confirms the advantages of the proposed device and the modes.

Heating controller is meant for determining that the temperature of loaded cooker is stable, if condition is fulfilled, in accordance to which change of temperature, determined by first heat detector, is within limits of given range during a given time period. When the temperature detected by first heat detector does not fulfill aforementioned condition, heating controller determines that temperature of loaded cooker becomes stable, on basis of temperature detected by second heat detector. Cooking apparatus with induction heating precisely determines change of temperature of loaded cooker by detecting infrared radiation of loaded cooker and determining the temperature of loaded cooker due to heat transfer from the cooker even in case when surrounding light falls onto apparatus.
