(57) Abstract:

The invention relates to food and oil industry. Three options of food emulsion product: low-calorie, srednekaloriyny and high-calorie food emulsion product. This emulsion product contains refined and deodorized vegetable oil, egg powder, milk protein, sugar, salt iodized table, mustard powder, acetic acid 70%, vitamins a, D, E, B1, B2; PP, B5; B6 Tu, B12, C, H, potassium sorbate, monosodium glutamate, 5% emulsion of beta-carotene, lactose, monoglycerides, potato starch or corn, soda and water. All of these components for each type of food emulsion product is taken in a certain ratio. The invention improves the biological activity of the product due to the synergistic effect of the use of vitamins, to maintain the normal functional activity of organs and systems of the body by increasing the proportion of fat to melt into the energy of the cells, reduce the risk of cardiovascular disease. 3 N. and 27 C.p. f-crystals, 3 tables.

The invention relates to edible oil and fat industries. Food amui beta-carotene, which ensures its high biological efficiency and increased absorption by the human body. The presence of a complex of vitamins provides a synergistic effect, when the effect of one vitamin enhanced by the action of others, in particular, increases the antioxidant function of vitamins C, E and beta-carotene. In the lactose globulin is a natural antibiotic that protects the body from harmful microbes. This invention allows to expand the range of food emulsion products, healthy, and stable during long term storage.

Famous food emulsion containing vegetable oil, food acid, flavour, water, mayonnaise emulsion with a pH of 4.0 to 10.0 and a viscosity of 4.0-40,0 Pas, and/or mustard emulsion with a viscosity of 1.0-25,0 Pas, and/or fruit and/or vegetable emulsion with a pH of 3.0 to 10.0 in an amount to provide in the finished product pH of 1.0 to 9.5, a viscosity of 2.0-55,0 Pas and/or fluidity of 0.5-15.0 cm for 30 s (EN 2166867 S1). The disadvantages of this emulsion can be attributed to the increase in fat deposits on the abdomen, collagenous tissues of the human body, as it does not contain the necessary substances to facilitate the transition of saturated fatty acids into energy the plaques and, consequently, ischemic heart disease, myocardial infarction, strokes, etc.

Also known edible emulsion intended primarily for mayonnaise, cream or sauce containing as vegetable bases of palm olein with a melting point of 12-25C (EN 2160998 S1). This invention makes possible the use of vitamins a, b, E, D, etc. in fact it is only a Declaration, because the specific content (wt.%) not regulated. A wide range of organoleptic sensations does not justify the risk of coronary heart disease.

The objective of the invention is the creation of a food emulsion product, leveling the negative impact of fats, in particular low-density lipoprotein, on the body of a person and that has high nutritional and energy value.

The technical result of the present invention is as follows:

- compensates the deficiency of biologically active ingredients - vitamins in the body;

- ensures the maintenance of normal functional activity of organs and systems of the body by increasing the proportion of fat, turning into energy cells;

- the conditions to maintain healthy microflora in humans;

- supports normal functioning of the gastrointestinal tract while decreasing the likelihood of duodenitis;

- provides warning of nervous stress and antioxidant;

- increases the biological activity of the product due to the synergistic effect of using complex vitamins;

- expanding the range of food products in a food emulsion product with a wide range of its application, with a large range of sensory experiences and, most importantly, easily digestible by the human body through the use of vitamins. The invention is illustrated by the following examples, which do not exhaust the full scope of legal protection of this invention.

Example 1

1. Food calorie emulsion product, including vegetable oil, egg powder, sugar, mustard powder, acetic acid, milk protein, starch, preservatives, vitamins, water, characterized in that the used vegetable oil refined deodorized, acetic acid 70%, iodinated white salt, and the use of vitamins: a, D, E, B1, B2, PP, B5, B6, BC, B12, C, H, preservative - potassium sorbate, beta carotene, lactose, potato starch or corn and a soda in the following ratio, wt.% (see tab.1).

All the above does not exhaust the possible solutions, with technical novelty.

Example 2

Food srednekaloriyny emulsion product, including vegetable oil, egg powder, sugar, mustard powder, salt, acetic acid, milk protein, starch, preservatives, vitamins, water, characterized in that the used vegetable oil refined deodorized, acetic acid 70%, iodinated white salt, and the use of vitamins: a, D, E, B1IN2, PP,5IN6IN12INwith, C, H, and preservative - potassium sorbate, flavor enhancer - monosodium glutamate, and emulsion product additionally contains a 5% emulsion of beta-carotene, lactose, potato starch or corn and a soda in the following ratio, wt.% (see tab.2).

All the above does not exhaust the possible solutions, with technical novelty.

Example 3

High-calorie food emulsion product comprising oil rook, starch, preservatives, vitamins and water, characterized in that the used vegetable oil refined deodorized, Oksana acid 70%, iodinated white salt, and the use of vitamins: a, D, E, B1IN2, PP,5IN6B12Bwith, C, H, and preservative - potassium sorbate, flavor enhancer - monosodium glutamate, and emulsion product additionally contains a 5% emulsion of beta-carotene, lactose, potato starch or corn and a soda in the following ratio, wt.% (see tab.3).

The resulting emulsion products have different nutritional and energy value which can be changed by varying the amount of water and oil. Emulsion products have sweet and sour taste with a buttery hue, as well as acquire the taste and smell of natural or identical to natural flavorings.

4. Food calorie emulsion product under item 1, characterized in that it contains polyunsaturated fatty acids (omega-3 and omega-6) from the calculation for omega-6 at least 12-15% of total calories with respect to the ratio of omega-6:omega-3 as 5:1.

5. Food calorie emulsion product under item 1, characterized in that it contains spices in an amount of 0.01-25%, selected from a number of: oregano, Basil, mint, turmeric, coriander, fruit of the Roman cumin, caraway, saffron, anise, ginger, cardamom, tarragon, fenugreek seeds, black pepper, red pepper, chicory, vanilla, vanilla, savory, thyme, sage, nutmeg, barberry, cloves, cinnamon, cumin, rosemary, star anise.

6. Food calorie emulsion product under item 1, characterized in that it contains fillers in amounts of 0,NIR, Mandarin, avocado, lemon peel, orange peel, onion, parsley, celery, parsnip, dill, garlic, radish, horseradish, mustard, carrots, beets, beans, Jerusalem artichoke, poppy, and mixtures thereof.

7. Food calorie emulsion product under item 1, characterized in that it contains a chemical substance selected from the range: MSG, iodine, potassium sorbate, monoglycerides (SAS), lactose, beta-carotene, citric acid, and mixtures thereof in amounts of 0.001 to 5.0%.

8. Food calorie emulsion product under item 1, characterized in that it contains alcohol-containing products in an amount of 0.01-25%, selected from the series: red wine grape, white grape wines, fruit wines, Cahors wine, port, cognac, brandy, nutmeg, wine, vermouth, Martini, balm, and mixtures thereof.

9. Food calorie emulsion product under item 1, characterized in that it contains the finished products in the amount of 1-25%, selected from the range: cheese, yogurt, yogurt, mashed liver and mixtures thereof.

10. Food calorie emulsion product under item 1, characterized in that it is mixed with ready-made sauces in the amount of 1-25%, selected from the series: “Bouquet Garni” (dill, tarragon, leeks), eggplant (dry ground spices - red is “Amateur”, sauce “Cuban” sauce “East” sauce “Moscow” sauce “kebab”, sauce: “Moldova”, “Tkemali” sauce “Nasasabi and mixtures thereof.

11. Food srednekaloriyny emulsion product, including vegetable oil, egg powder, sugar, salt, mustard powder, acetic acid, milk protein, starch, preservatives, vitamins and water, characterized in that use vegetable oil refined deodorized, acetic acid 70%, salt iodized table, and the use of vitamins: a, D, E, B1B2, PP,5IN6BcB12With N as preservative - potassium sorbate, and as a flavor enhancer - monosodium glutamate, and emulsion product additionally contains a 5% emulsion of beta-carotene, lactose, monoglycerides, potato starch or corn and a soda in the following ratio, wt.%:

12. Food srednekaloriyny emulsion product on p. 11, characterized in that it contains oil or mixture of oils in quantities of up to 47%, selected from a number of: soy, corn, peanut, cotton, rapeseed, palm, lettuce, cotton, olive oil, grape seed oil, rapeseed oil, walnut oil and mixtures thereof.
