The invention relates to poultry processing and meat industry, namely to receive a protective coating of poultry carcasses or meat or meat products for long-term storage. Protective composition contains taken in certain amounts of the following components: an aqueous solution containing collagen extract, glycerin and acetic acid. The application of the composition to the surface of poultry carcasses or meat products carried out by spraying or immersing them in the composition. The use of a protective composition can reduce energy consumption by 50% compared with traditional methods of storage of raw meat and poultry. When this composition is very easy to make, non-toxic and washes off easily with water at room temperature. table 2.

The invention relates to poultry processing and meat industry, namely to obtain a protective composition for coating surfaces of fresh meat, evisceration of carcasses and parts of poultry and meat products.

Known compositions for coating meat and meat products containing starch, monoglycerides of edible animal fats, acetylated monoglycerides, preservative sorbic acid and a mixture of potassium is about the use of these compounds helps to reduce shrinkage, but does not reduce bacterial colonization of meat products. Known composition for coating the surface of meat products, in particular sausages for long-term storage, containing calcium carbonate is 40%, gelatin - 3% glycerol - 2%, and water (ed. St. BG N 36360, A 22 C 13/00, prototype).

The aim of the invention is to reduce the growth of microorganisms of poultry carcasses or meat or meat products, increase shelf life, expanding the range cf the acquisition, is the creation of such a composition for coating of the poultry carcasses, or meat, or meat products, which will reduce bacterial colonization of products to increase shelf life, easily washable with water at room temperature and non-toxic. This is achieved by the fact that the protective composition for covering a carcass poultry, or meat, or meat products for long-term storage, including glycerin and the amendment, which is characterized in that, as the amendment contains an aqueous solution containing collagen extract from 78,5 to 90.0% with solids content up to 4.5%, which is injected glycerin from 3 to 20%, and acetic acid from 1 to 2.5%.

But in an aqueous solution containing collagen extract, taken in an amount of 78.5%, add 20% glycerol and 1.5% acetic acid.

The period of storage at a temperature of 02oC until microbial contamination to an acceptable level was 15 days.

Example 3. The method of preparation is legendarias extract, taken in the amount of 96%, contribute 3% glycerol and 1% acetic acid. Carcasses of poultry, processed the received contents on the 12th day of storage at a temperature of 02oC had a bacterial infection to acceptable levels.

The results of the research, for clarity, are given in table. 1 and 2.

The resulting composition of the protective coating of poultry carcasses or meat products are non-toxic, easily washed off with water at room temperature, harmless to human body, because all the ingredients used in the diet of people.

The use of a protective composition for the coating of poultry carcasses, or meat, or meat products can reduce energy consumption by 50% compared with traditional methods of storage of poultry meat and meat products.
