(57) Abstract:

The invention relates to the food industry and can be used in the beverage, food concentrates, confectionery and bakery industry. The proposed multicomponent concentrate contains maltose syrup, stevia leaf extract, honey and water in the following ratio of ingredients in terms of extractive substances, wt.%: extractives maltose molasses 38,2-40,4; extractives of stevia leaf extract 30,5 to 31.8; extractive substances of honey 5,8-6,6; water - the rest. Received multicomponent concentrate forms the flavor of foods for diabetics, enriches their natural biologically active substances, micro - and macro-elements, reduces the calorific value of finished products which contain them, and reduces the consumption of the product, forming a harmony of taste.

The invention relates to food industry, namely, food concentrates, confectionery and bakery industry.

The proposed multicomponent concentrate is a new substance and has no analogues.

Extractives of stevia leaf extract - 30,5 to 31.8

Multicomponent concentrate was prepared as follows:

Carry out the enzymatic hydrolysis of stevia leaf and receive from them the hydrolysate. Then in the hydrolysate inactivate the enzyme treatment, it quickly cooled down to 25-20oC, mixed with ethyl rectified alcohol and get alcoholized extract from the stevia leaf. Thus obtained extract mixed with honey and maltose syrup and the mixture is thickened. The condensation is carried out in a rotary film device at 45-48oC to achieve the concentration of solids in the concentrate 68-72%.

Received food additive, in which maltose syrup is combined with stevia leaf extract and natural honey, gives soft is terasawa multicomponent concentrate, thirst quenched two or three SIPS, which is very important for the diet of patients with diabetes.

The concentrate has a small calorie.

FIELD: food processing industry.

SUBSTANCE: claimed beverage contains 7.85-8.15 kg of multicomponent concentrate comprising sugar and aqueous/alcohol ferment extracts from calamus roots and mixture of hypericum grass, plantain leaves, maize baculum with snouts, hawthorn fruits. Additionally it contains citric acid 1.8-2.2 kg, table salt 0.28-0.32 kg, cinnamon infusion 0.2-0.3 dm3, flavorings (coffee, orange, etc.) 2.06-2.34 kg, color 7.85-8.15 kg, glucose and fructose syrup 101.2 kg, conserving agent 0.155-0.195 kg, and balance up to 1000 dm3: water. Multicomponent concentrate contains 70±2 % of dry matter, and extractive matter and sugar in mass ratio of 1:(4±0.2). Beverage of present invention represents clear dark brown liquid with sour-sweet taste and cryptic magnolia vine odor.

FIELD: syrup with native microalgae biomass, microalgae cultivation.

SUBSTANCE: claimed method includes preparation of washed and filtered microalgae biomass having humidity of 60-95 % and blending thereof with carbohydrate-containing syrup. Carbohydrate-containing syrup is added to obtained biomass in at least two steps. In the first step carbohydrate-containing syrup is added in amount of (0.8-1.2) based on biomass volume; and in the second one in amount of (3.8-21) based on biomass volume, wherein carbohydrate-containing syrup contains not less 50 % of dry matters and is heated up to 20-45°C. In the firs step food supplements such as citric and/or ascorbic acids may be used, and in the second one syrup may be added sequentially by equal portions. Biomass after blending with syrup optionally is homogenized and then optionally pasteurized. As carbohydrate-containing syrup glucose/fructose syrup may be used. As microalgae Spirulina platensis microalgae may be used.

EFFECT: syrup of decreased cost, improved digestibility, taste and color.
