SUBSTANCE: method provides for preparation of a flavour syrup from Flavomix-R biologically active additive, Lemon-Lime natural flavour 5.11721 Doehlar, Caramel Colour E150d colouring agent, 2.00171 Doehler and ascorbic acid. After that, carbonated mineral water is added at constant mixing directly to the obtained flavour syrup for stabilisation of properties of decloracetin contained in Flavomix-R biologically active additive. Then, carbon dioxide is removed from the carbonated drink, and therefore, a noncarbonated soft drink is obtained. The following original components are used per 1000 dm3 to obtain a finished drink: ascorbic acid 0.05-0.07 kg, Flavomix-R biologically active additive 0.6-0.85 kg, Lemon-Lime natural flavour 0.15-0.25 kg 5.11721 Doehlar, Caramel Colour E150d colouring agent 0.08-0.07 kg, 2.00171 Doehler and water making the rest.

EFFECT: method ensures improvement of organoleptic indicators and preservation of stability of dihydroquercetin during the whole period of shelf life of a noncarbonated soft drink; a possibility of its use in rations of diabetic, dietary and school meal, as well as it allows enlarging the range of noncarbonated soft drinks.

The technical result of the proposed method is to improve the organoleptic characteristics and the stability of dihydroquercetin, part of the biologically active additives "Flomix-R", throughout the shelf life of non-alcoholic non-carbonated drink, as well as expanding the range of non-alcoholic non-carbonated drinks.

The applicant has experimentally found that it is a joint used is e biologically active additives "Flomix-R and ascorbic acid leads to the manifestation of synergies because ascorbic acid restores phenolic compounds and binds metals in the drink. - ascorbic acid GF release X 6 tbsp.. - carbon dioxide according to GOST 8050-85. The method of obtaining non-alcoholic non-carbonated drink is done in two stages:

preparation blended syrup with the addition of biologically active additives "Flomix-R;

the preparation of the drink.

Blended syrup is prepared in a closed or open tanks, enameled, aluminum or stainless steel.

Preparation blended syrup provides for the dissolution of mineral water used ascorbic acid and biologically active additives (BAA) "Flomix-R". To increase the dissolution rate BAD "Flomix-P" dissolved 1:2 in water with a temperature of 25-30°C.

FIELD: production of alcohol-free beverages, in particular, production of natural infusions from raw fruit material.

SUBSTANCE: method involves preliminary cleaning and mechanical processing of fruits and/or berries, with following thermal processing thereof in softened water at temperature of 80-850C; mixing filtered concoction with concentrated juice and/or fruit and/or berry extract; adding sweetener and acidifier and cooling resultant product. Components are preferably introduced in amounts, at which 4-8.5 parts of water are used with 1 part of fruit and/or berry mixture with concentrated juice or extract, with weight ratio of juices and/or extracts of fruits and/or berries to fruits and/or berries is 0.1-0.8:1 on conversion to dry substance content in fruit or berry juice. Optimal sugar content is 4-12% by content of dry substance of sugar. Acidifying agent is introduced in an amount providing for acidity of composition of up to 0.2-1% on conversion to citric acid. Method may involve additional pasteurization at temperature of 80-900C at excessive pressure of 0.02 MPa. Storage time, beginning from production date, at temperature of 18-200C and moisture content of 65-70% is 12 months.

Resultant beverage is foaming, freshening, light, low-caloricity beverage of homogeneous composition, which has natural milk taste not leaving whey aftertaste, facilitate in increasing life tone and stimulate in the same manner as koumiss. It has homogeneous milk mat color with yellow tint. Said beverage has shelf life of at least 6 months.
