FIELD: food industry.

SUBSTANCE: invention is related to food industry and may be used in bakery production. The device consists of feeders for supply of bulk components and liquid, a preliminary mixing device and a mixing device. The preliminary mixing device is represented by a band conveyer with a bulk component feeder, equipped with a gate, mounted over it. Liquid is supplied with the help of spraying devices represented by brush sprayers designed in the form of a rotary brush immersed into a vessel with liquid. The sprayers are mounted so that to be capable of vertical motion relative to the band conveyor and of horizontal motion relative to the bulk component feeder longitudinal axis. The sprayers are mounted either side of the bulk component feeder. The level of liquid in the sprayers vessels is adjusted with the help of cocks mounted on the nipples supplying liquid into the sprayers vessels.

EFFECT: invention implementation will allow to enhance the resultant product quality.

 

The device applies to the food industry and can be used in bakery production.

A device for mixing the flour with the liquid components (P3-HTO) [Technological equipment bakeries and ways of its improvement / Autosource. - M: Light and food industry, 1982], consisting of a mixing chamber, a nozzle for supplying the dry and liquid components and kneading blades.

The disadvantage of this device is the duration of the process of mixing the dry components and liquid due to a poorly developed contact surface of dry components and liquid, as well as the relative structural complexity of the mixer.

The closest in technical essence and the achieved effect is the mixing machine of continuous operation [AC SU # 1577742, publ. bull. No. 26, 1990], consisting of feeders for feeding loose components and fluid, pre-mixing and mixing chamber.

The disadvantages of this device are: insufficient intensity of the pre-mixing, the lack of uniformity of the mixture, the presence of a source of vibration which adversely affect working conditions.

The technical problem of the invention is to develop a device for mixing of dry components with liquid-ru is found to improve the quality of the product, the intensification of the process of pre-mixing, increasing the uniformity of the composition of the mixture, increasing the contact area of loose components with liquid, accelerating the process of mixing the dry ingredients with the liquid and the improvement of working conditions with elimination of the source of vibration.

The technical problem of the invention is achieved in that the device for mixing the dry components and liquid consisting of feeders for feeding loose components and fluid, pre-mixing and mixing chamber, what's new is that as the device for pre-mixing is used belt conveyor, on which is installed a feeder of loose components, has a gate valve, and fluid flow is carried out using a spray device, which are used brush sprayers, representing a rotating brush is immersed in the liquid reservoir, and the dispensers are installed so that they can move vertically relative to the belt conveyor and the horizontal direction relative to the longitudinal axis of the feeder of loose components, and nozzles installed on both sides of the feeder of loose components and the liquid level in tanks of nozzles is controlled by valves that are installed on the nozzles of the liquid is in a tank sprayer.

The technical result of the invention is to improve the quality of the product, the intensification of mixing, increasing the uniformity of the mixture, increasing the contact area of loose components with liquid, accelerating the process of mixing the dry ingredients with the liquid and the improvement of working conditions with elimination of the source of vibration.

Figure 1 presents a diagram of the device for mixing of dry components with a liquid.

Device for mixing of dry components and liquid is a belt conveyor 1, which has a feeder for feeding loose parts 2, equipped with a slide gate 3, and the spray device 4, and 5. Belt conveyor is equipped with a scraper 6 to skimania adhered mixture and mixing 7, which gives the finished product. As the spray devices are used brush sprayers, representing a rotating brush is immersed in the liquid reservoir, which is located on both sides of the feeder supply bulk components, and they are installed so that they can move vertically relative to the belt conveyor and the horizontal direction relative to the longitudinal axis of the feeder supply bulk components 2. Fluid flow in the vessel nozzles is carried out using a pump 9, and maintains the level of liquid in tanks using devices 8, located on the nozzles of the liquid 10.

Device for mixing of dry components and liquid works as follows.

Ribbon belt conveyor 1 pre-moistened spray device 4. The feeder supply bulk products 2 on pre-moistened belt of the belt conveyor of bulk components, the thickness of which is controlled by a gate valve 3. The layer of loose components formed after the gate valve 3 with a pre-moistened lower layer, hydrated top spray device 5 with the formation of a heterogeneous mixture with the desired concentration of the liquid. This mixture over the tape belt conveyor 1 is a device for mixing 7, which gives the finished product, and stuck to the tape, the mixture is removed by the scraper 6. The flow of liquid in the tank of the spray devices is accomplished using a pump 9, and regulation of liquid level in tanks spray devices using device 8 located on each pipe 10 from the fluid.

The proposed device allows you to:

- to improve the quality of the product;

- to increase the intensity of mixing;

to improve the uniformity of the mixture;

- to increase the contact area of loose components with liquid;

to accelerate PR is the process of mixing the dry ingredients with the liquid;

- to improve working conditions with elimination of the source of vibration.

SUBSTANCE: invention relates to food industry. The aerated dough bread production method involves the processes of dough stirring, kneading and dividing into portions of the specified weight and bread baking. The dividing process is performed after the stirring process completion and before the kneading process. The kneading process is performed separately for every dough portion. Then one performs aerated dough bread baking. The dough stirring and kneading processes may be performed with devices preferably intended for performance of the processes of stirring and kneading respectively. The kneading process may be performed under a pressure of no less than 0.3 MPa with subsequent pressure decrease to atmospheric value at an adjustable rate. Pressure decrease to atmospheric value is performed before the kneading device withdrawal from the dough or after the kneading device withdrawal from the dough. The kneading process may be performed in intermediary glasses with subsequent dough relocation into baking tins or in baking tins.

EFFECT: invention allows to simplify and enhance accuracy of the process of dough dividing into portions of specified weight, enhance the quality of the aerated dough produced as well as reduce energy intensity and increase performance of aerated dough bread production.

The dough-kneading machine contains a trough designed in the form of a cylinder and a kneading worm designed in the form of a hollow rotating shaft (installed in the centre of the trough) whereon three pairs of kneading blades of identical length equal to 0.8 diameter of the trough inner surface are uniformly installed from top to bottom, placed at an angle of 60 relative to each other; the kneading blades are deigned to be hollow and have a longitudinal slot with holes.

EFFECT: invention allows to enhance kneading quality by way of dough undermixing elimination and kneading duration reduction.

The kneading-and-beating machine contains a kneading chamber with a lid, a kneading worm with an electric motor, a device for the ready product discharge; the novelty consists in the fact that the kneading chamber is designed to be sealed and equipped with a double circuit water jacket that may be applied both for cooling and for heating dough mass and is installed at an angle of 60 to a horizon; the kneading worm represents a gate stirrer fixed on a shaft and consisting of four brackets ends whereof are welded to the rings fitted onto the shaft with the help of a keyed joint, the brackets positioned at an angle of 90 relative to each other; the kneading-and-beating machine is equipped with a compressor and a receiver.

EFFECT: invention allows to enhance the ready product quality due to more efficient stirring, intensify the dough preparation process, reduce energy consumption for dough preparation, reduce production facilities, increase bread yield, decrease the ready product prime cost.

SUBSTANCE: invention relates to food industry, in particular, to bakery production equipment and may be used for non-yeasted aerated dough preparation. The kneading-and-beating machine contains a kneading chamber with a lid, a kneading worm with electric motor, a device for the ready product discharge, a compressor and a receiver. The kneading chamber is designed to be sealed and equipped with a cooling jacket. The bottom part of the chamber is designed in the form of a semisphere, a shaft with a kneading worm fitted on it passing through the upper part of the semisphere. The kneading worm is horizontally installed with a minimum clearance relative to the bottom side and represents four semi-rings placed at an angle of 90 relative to each other. A slide-valve for excessive pressure release is mounted into the lid of the kneading chamber that communicates with the compressor and the receiver; the chamber and the electric motor are fixed on the framework.

EFFECT: kneading-and-beating machine structure allows to intensify the process of stirring recipe components, enhance the quality of aerated non-yeasted dough and reduce energy consumption for its preparation.

SUBSTANCE: invention relates to equipment for pasta production, in particular, to continuous action dough kneading machines for kneading crumb-like dough mass. The continuous action dough kneading machines contains a charging nipple, a horizontal working chamber with two working shafts with kneading blades, a drive consisting of a motor and a transmission mechanism for imparting rotary movement to the working shafts (the mechanism including a belt gear and a double-reduction gear) and a transmission mechanism for imparting reciprocal movement to the shafts (the mechanism consisting of a single-reduction gear, a worm gear and a cam mechanism). SUBSTANCE: invention relates to food industry. The method for preparation of non-yeasted dough involves dosing base and auxiliary raw materials into the air-tight tank of the kneading vessel, the raw materials kneading in the medium of carbon dioxide injected into the tank under pressure, the dough discharging. Additionally one supplies water into the tank filled with the raw materials; the water is preliminarily carbonated and intended for dough aeration. Carbonated water supplying is performed after injection of carbon dioxide into the tank. Kneading in the kneading vessel is performed under a pressure of 4-5 atm. The dough-maker for non-yeasted dough preparation includes a kneading vessel made air-tight and equipped with a lid, the working tool drive mechanism, a water treatment system. The kneading vessel lid is rigidly fixed. The kneading vessel wall is designed so that to enable its up and down movement along the cylindrical guide using the drive mechanism. Pipe-lines are conducted to the kneading vessel lid for supplying carbonated water and carbon dioxide with a releasing nipple mounted for releasing gas pressure from the kneading vessel. The water treatment system includes a carbon dioxide cylinder connected to the carbonation chamber via a pipe-line equipped with a cut-out tap.

EFFECT: invention allows to enhance bakery products quality, expand the range of dietary bakery products, reduce production facilities area and duration of the production process.

FIELD: food industry.

SUBSTANCE: invention relates to a doughnut ready for consumption and to its production method. In the process of doughnut production one applies a fat coating (containing 20 - 100 wt % of fat) on the surface of a doughnut untreated or incompletely ready for consumption for ensuring fat content equal to 2-8% of the doughnut weight. The doughnut coated with fat contacts 120-300C overheated vapour having pressure equal to 0.15 - 0.95 of saturated water vapour pressure during 0.3-15 minutes. The cooked dough of the doughnut ready for consumption has fat content equal to 3 - 14 wt %.

EFFECT: method allows to produce a doughnut with lower fat content and may by used for substitution of cooking methods wherein one uses a large quantity of fat.

In this device solids are fed down and move towards mixing area (12) along inner wall (11) of mixing chamber (4), which is vertically tilted - preferably a vertical chamber - and are soaked by liquid (4) under pressure from at least one nozzle (14), a fast jet striking inner wall (11) of mixing chamber, and run down towards below outlet (6). SUBSTANCE: kneading and mixing machine has at least one rotating working device which is adapted for insertion into pan rotating around vertical axis. Locking device is provided on pan bottom. For discharging of mixed contents, locking device is caused to move in vertical plane to intermediate position and is further moved around horizontal axis within pan to discharging position.
