The invention relates to the production technology of soft caramel.

A method of producing soft caramel, providing mixing and boiling to a specified solids content of sweet substances in the form of molasses and sugar, plasticizer in the form of a confectionery fat or refined sunflower butter or margarine, amendment in the form of gelatin and emulsifier in the form of phosphatides, cooling and the introduction of fragrance and flavoring (EN 2143821 C1, 10.01.2000).

The disadvantage of this method is a complex composition and high flow additives.

The technical result of the invention is the simplification of the structure and reducing the consumption of additives.

This result is achieved by the fact that in the production method of soft candy, providing mixing and boiling to a specified solids content of at least sweet substances, plasticizer, emulsifier and amendment, according to the invention as emulsifier and amendment drug use, obtained by sequential extraction of biomass micromycete Mortierella parvispora nonpolar solvent in the supercritical state, water, alkali, water, acid, water, alkali and water followed by Association of the first extract with tonymontana.

In the prior art it is known that the extraction of liquid carbon dioxide from biomass of micromycetes genera Mortierella, Pythium get oil containing extracts. (Lomachinskiy VA, Vasenkov I. Sequential extraction of biomass of microorganisms non-polar extractant, water, alkali, water, acid, water, alkali and water yields a solid residue known food amendment (EN 2116314 C1, 27.07.1998).

The method is implemented as follows.

Dry biomass micromycete Mortierella parvispora extracted with a nonpolar solvent, for example carbon dioxide or hexane, supercritical condition. At this stage, separating the first extract used in the future when receiving the drug. Further biomass sequentially extracted with water, alkali, water, acid, water, alkali and water. Obtained after completing all these stages of extraction of the solid residue combined with the first extract.

For the cooking the soft caramel boiled mixture, containing, at least, a sweet substance, such as sugar, syrup or invert syrup, plasticizer, for example, in the form of cooking oil, vegetable or animal oils, and preparation of biomass micromycete Mortierella parvispora, obtained by the above-described technology. When cooking the mixture to boiling in it can be additional components, such as dairy. After boiling and cooling the mixture can be injected additional components such as flavoring and aroma additives. With the introduction of additional components in boiled its mass is subjected to homogenization.

Example 1.

Soft caramel is cooked with sugar, molasses, margarine and mix of amendment in the form of gelatin with an emulsifier in the form of lecithin or mixture of biomass micromycete Mortierella parvispora, obtained using carbon dioxide, caustic soda and hydrochloric acid. The boiling mixture is performed to the same solids content. The same visco-plastic properties of the target product are obtained during the laying of the drug from biomass micromycete Mortierella parvispora 10% less than the amount of gelatin with lecithin.

Example 2.

Soft caramel is cooked with sugar, molasses, cooking oil, salt, condensed milk and mix gelatin with phosphatides or prep the ATA from biomass micromycete Mortierella parvispora, obtained using hexane, sodium hydroxide and acetic acid. The boiling mixture is performed to the same solids content. The same visco-plastic properties of the target product are obtained during the laying of the drug from biomass micromycete Mortierella parvispora 12% less than the amount of gelatin with phosphatides.

Thus, the present invention allows to simplify the composition of soft caramel and to reduce the consumption of additives.

SUBSTANCE: method involves preparing high-boiled sugar mass by introducing invert sugar into sugar syrup boiled out to temperature of 110-1150C, followed by further boiling out of mixture to temperature of 130-1400C; mixing resultant mixture with filler, such as flax seeds (version 1) preliminarily washed with water, dried in vacuum box to moisture content of 30%, with following drying in roaster to moisture content of 10%, or flax seed nuclei (version 2), said flax seed nuclei being preliminarily washed and held in water at temperature of 500C for 20-30 min and shelled for removal of coating, with flax seed nuclei being dried to moisture content of 30% in vacuum box with following drying in roaster to moisture content of 10%; forming products from resultant mass. Consumption of kozinak-type sweets allows protein deficit of population to be substantially reduced.
