The method of growing baker's yeast

The method of growing Baker's yeast includes preparation of seeds yeast culture, sowing received by yeast culture production medium and the cultivation of commodity yeast. In the process of growing commodity yeast selection part of the culture liquid culture of yeast, are in the growth stage, defined by the formula:’ where G is the accumulation of yeast, kg;- cultivation, h, followed by applying it to the stage of growing commodity yeast as seeds of culture for subsequent use in self-cultivation commodity yeast. The selection of the culture liquid culture of yeast in the quantity of seeds dose required for self-cultivation commodity yeast. The method allows to reduce energy consumption per unit of the target product by reducing the number of stages of preparation of seed yeast culture to improve the performance of commodity machines, and also to carry out the selection process, the culture fluid in the automatic mode. 1 table, 6 Il.

The invention relative to the s growing Baker's yeast, comprising a number of successive stages, during which accumulate yeast. Common to all methods is the multistage process of growing and growing from stage to stage the consumption of seed material, low modulus growth at intermediate stages.

The closest in technical essence to the present invention is a method of growing Baker's yeast, comprising preparing a seed yeast culture, sowing received by yeast culture production medium and the cultivation of commodity yeast.

Preparation of seed culture is carried out in several stages: sowing pure yeast culture of the test tubes in the beaker, then successive replanting obtained yeast culture in the apparatus larger volume for a given amount of seed culture depending on the volume of production nutrient medium to obtain a given yield of yeast (S. Nowakowski S. Handbook technologist yeast production): Food industry, 1973, S. 102 to 106).

The disadvantage of this method is the complexity of the preparation of the seed culture, a large energy consumption per unit of the target product and is not high enough productive is the unit of the target product by reducing the number of stages of preparation of seed yeast culture and productivity of commodity machines.

The problem is solved due to the fact that in the method of growing yeast, comprising preparing seeds yeast culture, sowing received by yeast culture production medium and the cultivation of commodity yeast according to the invention in the process of growing commodity yeast selection part of the culture liquid culture of yeast, are in the growth stage, defined by the formula(criterion A. D. Korneev) (where G is the accumulation of yeast, kg;- cultivation, h), and then submitting it to the stage of growing commodity yeast as seeds of culture for subsequent use in self-cultivation commodity yeast, and the selection of the culture liquid culture of yeast in the quantity of seeds dose required for self-cultivation commodity yeast.

The proposed method is as follows.

Seeds yeast receive traditional technology, which provides for several stages of cultivation in sterile environments, conducted in the laboratory, in the Department of pure culture and production nutrient medium. The process is carried out with aeration environment. When the yeast growth phase, defined by the formula:carry out the selection part of the culture fluid and supply it to use as seeds of culture in self-cultivation trademarks of yeast in the quantity of seeds dose required for self-cultivation commodity yeast.

To obtain the highest yield of marketable yeast selection of cultural liquid, used as seeds of culture in self-cultivation commodity yeast should be in the growth stage, matchingi.e. when maximum biomass accumulation of yeast (Fig.6). At an earlier stage the biomass accumulation of the yeast is still not enough, later in the period of slowdown in the growth rate of the culture is reduced activity and increases the likelihood of Contracting it by other organisms.

The selection process culture fluids withlead in the automatic mode, putting this principle into the program for automated control of technological process of growing kornprobst to the fermentation by the conventional technology and sephirot.

Of course, when changing the working volume of the apparatus used for self-cultivation commodity yeast type aerator or strain uterine culture, the number of selected cultural liquid culture of yeast that is used as the seeds of culture, and the selection will vary, but the principle of selection, taking into account the stage of growth of the yeast, as defined in the above formula, is saved.

It should be borne in mind that these generations can be several (usually 2-3). You want to continuously monitor the condition of yeast culture, because with increasing number of generations may be contamination by other organisms and inactivation. If required, you have to move to a sterile uterine culture with subsequent use of the proposed method.

The proposed method is illustrated by examples.

Example 1. Prepare seeds yeast Sacharomyces cerevisiae by the conventional technology, as described in the next similar. The last stage of cooking seeds yeast culture is carried out in an apparatus with a capacity of 30 m3and pass in her trademark office (V1) with a capacity of 100 m3from reglamentirovatjsya does not provide high mass transfer characteristics of the device and do not allow for intensive fermentation process).

In the process of growing yeast determine the stage of their growth. When reaching the stage of growth of the yeast, corresponding to the formulabegin sampling the culture fluid and direct it as seeds of culture in the apparatus (V2), used for self-cultivation commodity yeast. Growth phase yeast defined by the formula, is observed on the 11th hour (Fig.1, 2).

The selection of the culture fluid is carried out in the quantity of seeds dose commodity system (V2) with a capacity of 100 m3. Seeds dose of the apparatus in this case is (in terms of yeast) - 1200 kg (Fig.2).

In Fig.2 shows that after the selection of the apparatus (V1) part of the culture fluid, the 15th hour of cultivation, i.e. after 4 h, the biomass accumulation of the yeast reaches the same values as in the apparatus without sampling the culture fluid (Fig.1 and 2). In the apparatus (V2) for the same period (4 h) biomass accumulation yeast is 1000 kg

The selection process culture fluids withcarried out in automatic mode.

After selecting part of the culture liquid of the process of growing commodity yeast in the apparatus (V1) continue to receive the s by the conventional technology.

Supplied from the apparatus (V1) in the apparatus (V2) seeds yeast is most active and has the maximum growth rate.

When growing yeast proposed method the capacity of the apparatus is increased by 25%, the yield of yeast is increased from 75% to 90%.

The process of growing commodity yeast described in the following table.

Example 2.

Seeds yeast Sacharomyces cerevisiae prepared as described in example 1. The process of growing commodity yeast on the conventional composition of the medium in the apparatus (V1) with a capacity of 100 m3. For aeration use the aerator Korneev (Patent No. 2195489), providing a high mass transfer characteristics of the device that makes possible the process of fermentation in concentrated environments: selection of cultural liquid, used as seeds of culture, carry out a quantity of seeds dose system (V3) - 2100 kg growth phase yeast culture, defined in the above formula, it is 7 o'clock (Fig.3, 4). At this time undertaking the selection of the culture fluid from the apparatus (V1) and send it to the device (V3) of the same capacity for self-cultivation commodity trwania, i.e. already after 3 h, the biomass accumulation of the yeast reaches the same magnitude as in the apparatus without sampling the culture fluid, and at the same time in the apparatus (V3) biomass accumulation yeast is 1400 kg

The use of the proposed method, the performance of the apparatus is increased by 30%, and the yield of yeast is increased from 75% to 96%.

The proposed method for the cultivation of yeast can be used when using detachable-topping-up method. While the selection of the culture fluid is also atas evidenced by the data shown in Fig.5.

Thus, the proposed method of growing yeast can reduce energy consumption per unit of the target product by reducing the number of stages of preparation of seeds yeast culture and to improve the performance of commodity machines.
